Marhaba! Yes, you know by now, I do love autumn! In the past few weeks, my wife and I have been experimenting with different Autumn recipes. Just this week we had pumpkin Kibbeh and autumn salad. Today I am sharing a recipe that my wife and I tried yesterday evening as a side dish. We are planning to serve this soup as a side dish later this week for our planned Thanksgiving Dinner. Again back to learning from the world’s greatest cooks, our mothers back in Lebanon, this recipe is something our parents prepared throughout the fall and winter season. Really easy to prepare and extremely satisfying! As always, I have translated the recipe to Arabic! I am sure this helps with your learning! Make sure you try this recipe and share your results. Ingredients:

– 3 large carrots
– 2 garlic cloves
– 1 leek
– 2 small potatoes
– 500 grams (about 1 pound) of chickpeas
– 1 cup rosemary
– 2 cups parsley
– 1 tsp of salt
– 1 tsp of allspice
– 2 large cans of diced tomatoes with juice
– 500 milliliters of vegetable broth

Directions:

– Chop leek, carrots, and potatoes into small chunks.
– Finely chop parsley, rosemary, and garlic.
– Add all chopped vegetables (except parsley) into a large saucepan and add vegetable broth. Season with salt and allspice. Cook for 10-15 minutes until all vegetables are tender.
– In separate saucepan, cook chickpeas over high for 25 minutes or more depending on how tender you like them.
– Add diced tomatoes and parsley to the saucepan of vegetables and broth.
– Add chickpeas to the mix.

شوربة الخضار الخريفية
المكونات

ثلاث جزرات
حصين ثوم
كرات
بطاطتين صغيرتين
خمسمئة غرام (حوالي باوند واحد) من الحمص
كوب اكليل الجبل
كوبان بقدونس
ملعقة ملح
ملعقة بهار
علبتان من الطماطم المقطعة مع العصير
خمسمئة مليليتر من مرقة الخضار

التحضير

اقطع الكرات, الجزر, والبطاطا الى قطع صغيرة
افرم البقدونس واكليل الجبل والثوم ناعماً
أضف كل الخضار المقطعة (باستثناء البقدونس) الى قدر كبير واضف مرقة الخضار. اضف الملح والبهار. اطبخ لمدة عشرة أو خمس عشرة دقيقة حتى تستوي الخضار
في قدر آخر, اطبخ الحمص على نار قوية لمدة خمسة وعشرون دقيقة أو أكثر حسب المذاق
أضف الطماطم المقطعة والبقدونس الى قدر الخضار والمرقة
أضف الحمص الى المزيج
