In this post, I present the recipe of a very famous dish in the Arab world, in fact it is well known all around the Mediterranean region. It is called (مسقعة), in English Moussaka. It is obvious that the English name is derived from Arabic, and the word Arabic means cold because this dish is best eaten cold!

The main components of the dish are eggplant (باذنجان), peppers (فلفل), tomatoes (طماطم) and spices (توابل). There are many ways of cooking Moussaka, some of them are vegetarian while others contain meat. I prefer the simplest ways.

Ingredients

1 – eggplant and pepper (fried or grilled)

2 – tomato sauce

3 – garlic, crushed

4 – grated onion

5 – a cup of water ..

6 – Spices (cumin, salt, pepper, Cinnamon, Coriander, and Paprika Spices)

7 – oil

Method

fry the onions in oil until it turns yellow, then add the crushed garlic.

Add all the spices in small amounts

Add the tomato sauce, cover the pan to cook

Add the fried or grilled eggplant, peppers, potatoes, more spices

Add water and leave it to cook as required
