Stuffed Cabbage<\/strong><\/span><\/h3>\n

Ingredients:<\/h3>\n

3 kg cabbage (preferably choose a big head with lightweight to its size)<\/h3>\n

Filling:<\/h3>\n

500 grams of rice<\/h3>\n

500 grams coarse minced lamb or beef meat<\/h3>\n

(without fat)<\/h3>\n

\u00bc cup cloves of garlic<\/h3>\n

1 tablespoon ghee<\/h3>\n

1 tablespoon olive oil<\/h3>\n

1 tablespoon vegetable oil<\/h3>\n

1 tablespoon salt<\/h3>\n

Ground spices: 1 teaspoon black pepper, 2 teaspoons mixed spices, \u00bd teaspoon cinnamon, \u00bd teaspoon cardamom, \u00bd teaspoon nutmeg, 1 teaspoon cumin<\/h3>\n

For cooking:<\/h3>\n

500 grams meat sheep racks<\/h3>\n

Large tablespoon vegetable oil<\/h3>\n

Salt, as required<\/h3>\n

Ground spices (\u00bd teaspoon black pepper, 1 teaspoon mixed spices)<\/h3>\n

1 tablespoon ghee<\/h3>\n

1 large garlic head<\/h3>\n

4 cups chicken or beef broth<\/h3>\n

In the last stages of cooking:<\/h3>\n

\u00bc cup lemon juice<\/h3>\n

Preparation:<\/h3>\n

Wash the rice and soak for half an hour in warm water, and drain<\/h3>\n

To prepare the cabbage:<\/h3>\n

By and large knife and cautiously, remove the head inside the cabbage<\/h3>\n

Open the outside leaves and put aside<\/h3>\n

Place the cabbage is in a large pot with boiling water, for a few minutes to soften leaves and gradually separate<\/h3>\n

Repeat the process so that we can separate all the leaves (we may need to cut some with the knife)<\/h3>\n

Drain leaves and leave to cool completely<\/h3>\n

Remove the hard bit in the middle of each leaf and cut into sizes suitable to wrap (keeps the cut pieces to distribution in the base of the pot for protection)<\/h3>\n

Mix the ingredients of the stuffing well<\/h3>\n

Spread each leaf so that the side in which the ribs are prominent is in the bottom, and stuff so that the stuffing is on the broader part of the leaf and roll (almost three times)<\/h3>\n

In the event of having small-sized leaves, place two near each other and roll together<\/h3>\n

Season the meat with salt and spices<\/h3>\n

Fry in vegetable oil on both sides until golden in color<\/h3>\n

Distribute a spoon of ghee<\/h3>\n

in the pot base and above the covering of the base<\/h3>\n

Place the meat on top, then place the stuffed cabbage on top neatly on several layers, including distributing garlic cloves unpeeled<\/h3>\n

Immerse cabbage in broth and a quantity of water to be in the same level (check the salt)<\/h3>\n

Put another plate on the surface slightly smaller than the pot, cover pot and leave cabbage leaves on high heat for about half an hour until rice grains in the last layer are cooked<\/h3>\n

Raise the plate, and cover the pot and simmer for about an hour (you may need to add a little bit of boiling water)<\/h3>\n

Before you remove from heat, distributes lemon juice<\/h3>\n

Leave the pot for half an hour before turning it and serve!<\/h3>\n
