Today, I am going to teach you how to cook Moujadara (\u0645\u062c\u062f\u0631\u0629) which is a tasty vegetarian dish (\u0637\u0628\u0642 \u0646\u0628\u0627\u062a\u064a) that is popular in the Middle East and specifically the Levant. It is a popular vegetarian dish throughout the year and especially during <a href=\"https:\/\/blogs.transparent.com\/arabic\/lent-40-days-of-prayer-and-fasting\/\">Lent<\/a>. In a nutshell, Moujadara is mashed lentils (\u0639\u062f\u0633) and rice casserole (\u0627\u0644\u0623\u0631\u0632 \u062e\u0632\u0641\u064a). It is usually considered a humble dish (\u0637\u0628\u0642 \u0627\u0644\u0645\u062a\u0648\u0627\u0636\u0639) and there is a saying (\u0642\u0648\u0644) in the Arab world (\u0627\u0644\u0639\u0627\u0644\u0645 \u0627\u0644\u0639\u0631\u0628\u064a) that depicts the importance of this dish in impoverished (\u0627\u0644\u0641\u0642\u064a\u0631\u0629) circles: \u201cA hungry man would be willing to sell his soul for a dish of moujadara.&#8221; (\u0627\u0644\u0631\u062c\u0644 \u0627\u0644\u062c\u0627\u0626\u0639 \u064a\u0643\u0648\u0646 \u0639\u0644\u0649 \u0627\u0633\u062a\u0639\u062f\u0627\u062f \u0644\u0628\u064a\u0639 \u0631\u0648\u062d\u0647 \u0644\u0637\u0628\u0642 \u0645\u0646 \u0645\u062c\u062f\u0631\u0629) It has been popular since Biblical times and the custom of serving and preparing this dish has accompanied the waves of Arab immigrants (\u0627\u0644\u0645\u0647\u0627\u062c\u0631\u064a\u0646) to different parts of the world, like North and South America. In certain cultures many individuals have crafted their own version of Moujadara by adding different types of spices (\u062a\u0648\u0627\u0628\u0644\/\u0628\u0647\u0627\u0631\u0627\u062a) and lentils.<\/p>\n<p>I am sharing the recipe that my wife and I use to cook this popular dish from a popular cooking book called <span style=\"text-decoration: underline;\">The Lebanese Kitchen: Quick and Healthy Recipes<\/span> by <a href=\"http:\/\/www.moniquebassilazaarour.com\/index.asp\">Monique Bassila Zaarour<\/a>, a Canadian registered dietitian (\u0627\u062e\u0635\u0627\u0626\u064a \u062a\u063a\u0630\u064a\u0629) with Lebanese roots (\u062c\u0630\u0648\u0631 \u0644\u0628\u0646\u0627\u0646\u064a\u0629). I have also added a YouTube video in Arabic that shows you how to cook this tasty dish. According to Zaarour and out of our personal experience, this recipe makes around four servings. In practice it does not require a lot of preparation and only requires around 15 minutes. Also, the cooking time is around 40 minutes. So all in all, you will have a full vegetarian dish in less than an hour! Keep in mind that you should be using cooked lentils for this recipe. If however, the lentils were uncooked, you need to cook around \u00be cup. It is optimal to mash the lentils with their skin after they are cooked, because they are rich in minerals (\u0627\u0644\u0645\u0639\u0627\u062f\u0646), vitamins (\u0627\u0644\u0641\u064a\u062a\u0627\u0645\u064a\u0646\u0627\u062a) and fiber (\u0644\u064a\u0641 \u0646\u0628\u0627\u062a\u064a).<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients: <\/span><\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon vegetable oil (\u0632\u064a\u062a \u0627\u0644\u0646\u0628\u0627\u062a\u064a\u0629)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 medium onion (\u0628\u0635\u0644), finely chopped (\u0645\u0641\u0631\u0648\u0645\u0629 \u0646\u0627\u0639\u0645\u0627)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bc cup short \u2013 grain rice, soaked (\u0645\u0646\u0642\u0648\u0639) in water for \u00bd hour<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 cups water<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 cups cooked lentils<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bd teaspoon all spice<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Preparation <\/span><\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 In a larger pot (\u0648\u0639\u0627\u0621 \u0643\u0628\u064a\u0631), heat oil, add onions and stir-fry until lightly browned.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add drained rice and 1 cup of the water.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bring to a boil.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cover and cook over low heat for 10 minutes.<\/p>\n<p>Meanwhile, in a large pot, bring remaining water to a boil.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add lentils; cook over medium heat until tender (\u0646\u0627\u0639\u0645).<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Mash the mixture in a food processor.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add to rice with seasonings.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cook over low heat, stirring constantly.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Remove from heat as soon as boiling starts.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Pour immediately into the serving plate, allow to cool and serve cold with fresh vegetables and salad (\u0633\u0644\u0637\u0629).<\/p>\n<p>&nbsp;<\/p>\n<p>This is the exact recipe (\u0648\u0635\u0641\u0629) that I borrowed from Zaarour; however, my wife and I do two additional things. First, in addition to serving it with salad or fresh vegetables, we like eating Moujadara with pita bread (Syrian\/Lebanese type) (\u0627\u0644\u062e\u0628\u0632 \u0627\u0644\u0644\u0628\u0646\u0627\u0646\u064a ). Second, we sometimes serve Moujadara with caramelized onion rings (\u062d\u0644\u0642\u0627\u062a \u0627\u0644\u0628\u0635\u0644). We simply cut a large onion into very thin rounds and then add them to small saucepan with heated canola oil. We keep on frying the onion rings till they become golden brown.
