Today, I am going to teach you how to cook Lamb Kebabs with a Lebanese twist. Similar to <a href=\"https:\/\/blogs.transparent.com\/arabic\/a-sizzling-barbecue-dish-how-to-prepare-shish-taouk\/\">Shish Taouk<\/a>, this is a tasty dish that is popular in the Middle East and is usually offered at every local restaurant. Even though the origins of the dish are from the Middle East, this dish has been adopted in the Balkans, the Caucasus, and some parts of Europe as well as Central Asia. In some towns in the Levant, like Aleppo (\u062d\u0644\u0628) in Syria, certain spices are added to the mix of ingredients. In such cases the Kebab picks up after the town\u2019s name like Kebab Halabi (\u0643\u0628\u0627\u0628 \u062d\u0644\u0628\u064a) for example. The word \u2018kebab\u2019 refers to grilling (\u0634\u0648\u0649) and cooking (\u0637\u0628\u062e) meat on a skewer (\u0633\u064a\u062e). The short supply of cooking fuel in the Middle East compelled people, especially soldiers to fry, cook and grill their meat over open fires.<\/p>\n<p>&nbsp;<\/p>\n<p>Given the fact you all know that my wife and I like barbecuing (\u0627\u0644\u0634\u0648\u064a) a lot, we thought of sharing the recipe we use to prepare and cook this delicious dish. More importantly, this is a popular dish during the Holy month of Ramadan (\u0634\u0647\u0631 \u0631\u0645\u0636\u0627\u0646 \u0627\u0644\u0645\u0628\u0627\u0631\u0643). After a long day of fasting (\u0635\u064a\u0627\u0645), many people would appreciate a tasty dish that satisfies the appetite (\u0634\u0647\u064a\u0629) in every possible way.<\/p>\n<div id=\"attachment_9820\" style=\"width: 526px\" class=\"wp-caption aligncenter post-item__attachment\"><a href=\"https:\/\/www.flickr.com\/photos\/josephine_lim\/6943687439\" aria-label=\"6943687439 5eab2ff7c3 Z\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9820\" class=\"wp-image-9820\"  alt=\"Image by Josephine Lim on Flickr\" width=\"516\" height=\"342\" \/ src=\"https:\/\/blogs.transparent.com\/arabic\/wp-content\/uploads\/sites\/12\/2013\/07\/6943687439_5eab2ff7c3_z.jpg\" srcset=\"https:\/\/blogs.transparent.com\/arabic\/wp-content\/uploads\/sites\/12\/2013\/07\/6943687439_5eab2ff7c3_z.jpg 640w, https:\/\/blogs.transparent.com\/arabic\/wp-content\/uploads\/sites\/12\/2013\/07\/6943687439_5eab2ff7c3_z-350x232.jpg 350w\" sizes=\"auto, (max-width: 516px) 100vw, 516px\" \/><\/a><p id=\"caption-attachment-9820\" class=\"wp-caption-text\">Image by Josephine Lim on Flickr<\/p><\/div>\n<p>Like some of the other websites that I have used before, today I am borrowing this recipe from another good Mediterranean cooking blog called <a href=\"http:\/\/homemade-recipes.blogspot.com\/2010\/11\/lebanese-lamb-kabobs.html\">Homemade Recipes<\/a>.<\/p>\n<p>&nbsp;<\/p>\n<p><b><span style=\"text-decoration: underline;\">Ingredients <\/span><\/b><\/p>\n<p>1 small onion (\u0628\u0635\u0644), finely chopped<br \/>\n1\/2 cup soft bread crumbs (\u0641\u062a\u0627\u062a \u0627\u0644\u062e\u0628\u0632)<br \/>\n4 cloves garlic (\u0641\u0635\u0648\u0635 \u0645\u0646 \u0627\u0644\u062b\u0648\u0645), minced<br \/>\n2 tablespoons snipped fresh parsley (\u0627\u0644\u0628\u0642\u062f\u0648\u0646\u0633)<br \/>\n1 tablespoons snipped fresh cilantro (\u0627\u0644\u0643\u0632\u0628\u0631\u0629)<br \/>\n2 teaspoons snipped fresh oregano<br \/>\n2 teaspoons snipped fresh mint (\u0646\u0639\u0646\u0627\u0639)<br \/>\n1\/2 teaspoon salt (\u0645\u0644\u062d)<br \/>\n1\/2 teaspoon ground cumin (\u0627\u0644\u0643\u0645\u0648\u0646 \u0627\u0644\u0645\u0637\u062d\u0648\u0646)<br \/>\n1\/2 teaspoon ground cinnamon (\u0627\u0644\u0642\u0631\u0641\u0629 \u0627\u0644\u0645\u0637\u062d\u0648\u0646\u0629)<br \/>\n2 eggs (\u0628\u064a\u0636), beaten<br \/>\n1-1\/2 pound ground lamb (\u062e\u0631\u0648\u0641)<\/p>\n<p><b><span style=\"text-decoration: underline;\">Optional Ingredients<\/span><\/b><\/p>\n<p>1\/2 of a small peeled and seeded cucumber (\u062e\u064a\u0627\u0631) (optional)<br \/>\n3\/4 cup plain yogurt (optional)<\/p>\n<p>1\/4 teaspoon crushed red pepper (\u0641\u0644\u0641\u0644 \u0623\u062d\u0645\u0631) (optional)<br \/>\nThinly sliced cucumber (optional)<br \/>\nSalt and pepper (optional)<\/p>\n<p><b><span style=\"text-decoration: underline;\">Directions <\/span><\/b><\/p>\n<p>1. Combine onion; bread crumbs; garlic; parsley; cilantro; oregano; mint; 1\/2 teaspoon cumin; cinnamon; crushed red pepper, if desired; and eggs in a large mixing bowl. Add lamb; mix well. Divide mixture into 8 portions. Shape each portion around a metal skewer (\u0633\u064a\u062e), forming a log that is 6 inches long and about 1 inch wide.<\/p>\n<p>2. Place skewers on the rack of the grill directly over medium heat. Grill lamb skewers for 10 to 12 minutes or until an instant-read thermometer inserted into the meat registers 160 degree F, turning once. (we use an open fire barbecue set rather than a standard grill)<\/p>\n<p>&nbsp;<\/p>\n<p>3. In a small bowl, stir together cucumber and yogurt, if desired. Season to taste with salt and pepper. Serve with Cucumber Yogurt Sauce, sliced cucumber, and grilled lemon wedges, if desired.<\/p>\n<p>Just like Shish Taouk, we have this sizzling dish with a dish of homemade hummus (\u062d\u0645\u0651\u0635), French fries (\u0628\u0637\u0627\u0637\u0627 \u0645\u0642\u0644\u064a\u0629), Arabic bread (\u062e\u0628\u0632) and <a href=\"https:\/\/blogs.transparent.com\/arabic\/how-to-prepare-tabbouleh\/\">tabbouleh<\/a>.
