It is a tasty dish that is popular in the Middle East and specifically the Levant. This dish has progressed from something that required intense and long hours of preparation to becoming a dish that is instantly offered with other mezza dishes in any restaurant in the Arab world. My wife and I usually prepare it during summer, because we associate this dish with the many times we have spent having it at one of the many resorts in Lebanon on the Mediterranean Sea. In seafood places, this dish is one of the various ways that Arabic chefs use to serve fish.<\/p>\n<p>I am sharing the recipe that my wife and I use to cook this popular dish from a noteworthy cooking book called <span style=\"text-decoration: underline;\">The Lebanese Kitchen: Quick and Healthy Recipes<\/span> by <a href=\"http:\/\/www.moniquebassilazaarour.com\/index.asp\">Monique Bassila Zaarour<\/a>, a Canadian registered dietitian (\u0627\u062e\u0635\u0627\u0626\u064a\u0629 \u062a\u063a\u0630\u064a\u0629) with Lebanese roots (\u062c\u0630\u0648\u0631 \u0644\u0628\u0646\u0627\u0646\u064a\u0629). According to Zaarour and out of our experience, this recipe makes around five servings. In practice it does not require a lot of preparation, around 20 minutes. Also, the cooking time is around 30 minutes. So all in all, you will have an impressive and tasty fish dish in less than an hour! (\u0628\u0623\u0642\u0644 \u0645\u0646 \u0633\u0627\u0639\u0629)<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients <\/span><\/p>\n<p><span style=\"text-decoration: underline;\">Sauce: <\/span><\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon vegetable oil (\u0632\u064a\u062a \u0646\u0628\u0627\u062a\u064a)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 medium onion (\u0628\u0635\u0644), thinly sliced (\u0645\u0642\u0637\u0639\u0629 \u0625\u0644\u0649 \u0634\u0631\u0627\u0626\u062d \u0631\u0642\u064a\u0642\u0629)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bd cup carrot (\u062c\u0632\u0631), finely chopped (\u0645\u0641\u0631\u0648\u0645\u0629 \u0641\u0631\u0645\u0627 \u0646\u0627\u0639\u0645\u0627)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bd cup red bell pepper (\u0627\u0644\u0641\u0644\u064a\u0641\u0644\u0629 \u0627\u0644\u062d\u0644\u0648\u0629 \u0627\u0644\u062d\u0645\u0631\u0627\u0621), finely chopped<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bd cup green bell pepper (\u0627\u0644\u0641\u0644\u064a\u0641\u0644\u0629 \u0627\u0644\u062d\u0644\u0648\u0629 \u0627\u0644\u062e\u0636\u0631\u0627\u0621), finely chopped<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 tomato (\u0637\u0645\u0627\u0637\u0645), finely chopped<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bd serving Cilantro (\u0627\u0644\u0643\u0632\u0628\u0631\u0629) and Garlic (\u062b\u0648\u0645)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 4 tablespoons tahini (\u0627\u0644\u0637\u062d\u064a\u0646\u0629)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 4 tablespoons lemon juice (\u0639\u0635\u064a\u0631 \u0627\u0644\u0644\u064a\u0645\u0648\u0646)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 teaspoon salt (\u0645\u0644\u062d)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bc teaspoon white pepper (\u0627\u0644\u0641\u0644\u0641\u0644 \u0627\u0644\u0623\u0628\u064a\u0636)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bc teaspoon red pepper (\u0641\u0644\u0641\u0644 \u0623\u062d\u0645\u0631)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 cup water (\u0645\u0627\u0621)<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">Fish: <\/span><\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 pounds fish filet (\u0641\u064a\u0644\u064a\u0647 \u0633\u0645\u0643) (baked)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon pine nuts (\u0635\u0646\u0648\u0628\u0631), toasted<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 pinch fresh cilantro (\u0627\u0644\u0643\u0632\u0628\u0631\u0629)<\/p>\n<p><span style=\"text-decoration: underline;\">Preparation<\/span><\/p>\n<p>In a large pan, heat oil, add onions, and stir fry until lightly browned.<\/p>\n<p>Add carrots and red and green bell peppers: stir fry until tender.<\/p>\n<p>Add tomato and Cilantro and garlic and stir fry for 5 more minutes.<\/p>\n<p>In a separate bowl, mix remaining sauce ingredients, then add to vegetables, stirring constantly.
