On those hot summer days, it&#8217;s nice having a cool, refreshing snack. There&#8217;s perhaps no better dish for this time of year than a <strong>smashed cucumber salad<\/strong> (\u62cd\u9ec4\u74dc p\u0101i hu\u00e1ng gu\u0101). You may also see it on a menu listed as <strong>cold cucumber<\/strong> (\u51c9\u62cc\u9ec4\u74dc li\u00e1ng b\u00e0n hu\u00e1ng gu\u0101). This is one of my personal favorite Chinese dishes and one you can find all over the country. There are many variations of this dish out there, but here are the most common ingredients you&#8217;ll find in it:<\/p>\n<p>\u9ec4\u74dc 2\u689d<br \/>\nhu\u00e1ng gu\u0101 2 ti\u00e1o<br \/>\n2 pieces of cucumber<\/p>\n<p>\u76d0 1 \u8336\u5319<br \/>\ny\u00e1n 1 ch\u00e1 ch\u00ed<br \/>\n1 teaspoon of salt<\/p>\n<p>\u7cd6 2 \u8336\u5319<br \/>\nt\u00e1ng 2 ch\u00e1 ch\u00ed<br \/>\n2 teaspoons of sugar<\/p>\n<p>\u849c\u5934 2 \u7c92<br \/>\nsu\u00e0n t\u00f3u 2 l\u00ec<br \/>\n2 garlic cloves<\/p>\n<p>\u5c0f\u8fa3\u6912 2-3\u4e2a<br \/>\nxi\u01ceo l\u00e0 ji\u0101o<br \/>\n2-3 small chili peppers<\/p>\n<p>\u829d\u9ebb\u6cb9 1 \u8336\u5319<br \/>\nzh\u012b ma y\u00f3u 1 ch\u00e1 ch\u00ed<br \/>\n1 teaspoon sesame oil<\/p>\n<p>\u918b 2 \u6c64\u5319<br \/>\nc\u00f9 2 t\u0101ng ch\u00ed<br \/>\n2 tablespoons of vinegar<\/p>\n<p>\u9171\u6cb9 2\u00a0\u8336\u5319<br \/>\nji\u00e0ng y\u00f3u 2 ch\u00e1 ch\u00ed<br \/>\n2 teaspoons soy sauce<\/p>\n<p>\u9999\u83dc<br \/>\nxi\u0101ng c\u00e0i<br \/>\ncoriander<\/p>\n<p>\u5927\u8471<br \/>\nd\u00e0 c\u014dng<br \/>\ngreen onion<\/p>\n<h2 style=\"text-align: center\">Recipe (\u98df\u8c31 sh\u00ed p\u01d4)<\/h2>\n<p>If you&#8217;re wondering why it&#8217;s called a &#8220;smashed cucumber salad,&#8221; it&#8217;s because one of the keys to this classic Chinese dish is actually smashing the cucumber!<\/p>\n<p>\u628a\u9ec3\u74dc\u62cd\u88c2\uff0c\u5207\u4ef6<br \/>\nb\u01ce hu\u00e1ng gu\u0101 p\u0101i li\u00e8, qi\u00e8 ji\u00e0n<br \/>\nSmash the cucumber and cut it into pieces.<\/p>\n<p>You can do this by laying the blade of a large knife flat on the cucumber. Once you&#8217;ve smashed them, you can cut the cucumber into little pieces.<\/p>\n<p>\u52a01\u8336\u5319\u76d0\uff0c\u62cc\u5300\uff0c\u7136\u540e\u5f85\u9ec4\u74dc\u51fa\u6c34<br \/>\nji\u0101 1 ch\u00e1 ch\u00ed y\u00e1n, b\u00e0n y\u00fan, r\u00e1n h\u00f2u r\u00e0i hu\u00e1ng gu\u0101 ch\u016b shu\u01d0.<br \/>\nAdd 1 teaspoon of salt, mix well, then wait for the cucumber to drain.<\/p>\n<p>You can use a strainer to do this. One trick is to put a plastic bag full of ice on top of the cucumbers. This takes about 15 minutes.<\/p>\n<p>\u5207\u5927\u849c\u548c\u8fa3\u6912<br \/>\nqi\u00e8 d\u00e0 su\u00e0n h\u00e9 l\u00e0 ji\u0101o<br \/>\nCut the garlic and peppers.<\/p>\n<p>You&#8217;ll want to mince them both real good. If you&#8217;re not into the spicy stuff, you can skip out on the chili peppers. You can also chop up some coriander and green onion to add if you like, although I rarely use these.<\/p>\n<p>\u628a\u918b 2 \u6c64\u5319, \u9171\u6cb9 2 \u8336\u5319, \u548c 2 \u8336\u5319\u7cd6\u62cc\u5300<br \/>\nb\u01ce c\u00f9 2 t\u0101ng ch\u00ed, ji\u00e0ng y\u00f3u 2 ch\u00e1 ch\u00ed h\u00e9 2 ch\u00e1 ch\u00ed t\u00e1ng b\u00e0n y\u00fan<br \/>\nMix 2 tablespoons of vinegar, 2 teaspoons of soy sauce, and 2 teaspoons of sugar.<\/p>\n<p>Make sure you&#8217;ve drained all the liquid from the cucumber and then you can add everything to the bowl. Toss in the sesame oil as well and mix it up real good!<\/p>\n<p>There you have it &#8211; the perfect dish for a hot summer day. This is one that you can get a bit creative with depending on your tastes. I like to add a bit more garlic, for example.<\/p>\n<p>My wife likes to cook a bit of <strong>Sichuan peppercorn<\/strong> (\u82b1\u6912 hu\u0101 ji\u0101o) in the oil first just to infuse it with that extra spice. She removes the peppercorns before pouring the oil over the cucumbers, because they aren&#8217;t very pleasant to eat!<\/p>\n<p>There are actually quite a few good YouTube videos where you can follow along with a recipe for this and practice your Chinese listening\/reading at the same time.
