I went to the small <b><a href=\"https:\/\/blogs.transparent.com\/danish\/2011\/07\/11\/tun%c3%b8-ain%e2%80%99t-got-no-traffic-jams\/\">Sams\u00f8<\/a> Bryghus<\/b> to talk to one of them.<\/p>\n<p><i>Who\u2019re you and where are we?<\/i><br \/>\n<b>Jeg hedder Stinne. Vi er p\u00e5 Sams\u00f8. Jeg er 52 \u00e5r, gift og har fem b\u00f8rn.<\/b> (I\u2019m Stinne. We\u2019re on the island of Sams\u00f8. I\u2019m 52 years old, married, with five children.) <b>Sams\u00f8 Bryghus<\/b> is a caf\u00e9, a brewery, a shop and an <b><a href=\"https:\/\/blogs.transparent.com\/danish\/2013\/04\/23\/cows-in-paradise\/\">\u00f8kologisk<\/a> landbrug<\/b> (biodynamic farm).<\/p>\n<p><i>How\u2019s your typical <\/i><b><i>arbejdsdag<\/i><\/b><i> (working day)?<\/i><br \/>\nThis time of the year, it starts <b>klokken seks om morgenen<\/b> (6 a.m.). I prepare food for my husband who spends the day working in our\u00a0field. I feed [the animals] and then I find <b>gr\u00f8nsager<\/b> (vegetables) for the caf\u00e9 and shop. Then I make sure there\u2019s food before the <b>kunder<\/b> (customers) arrive. The shop opens at 11 a.m.\u00a0and closes at 6 p.m.\u00a0and I have to attend to the customers and keep preparing\u00a0food. Then we start cleaning and getting ready\u00a0for the next day, before we\u2019re finally finished <b>ved nitiden <\/b>(around 9 PM).<\/p>\n<p><i>What\u2019s the best thing about your job?<\/i><br \/>\nMeeting a lot of people, mostly <b>glade mennesker<\/b> (happy people). It\u2019s also nice to be able to be your own boss\u2026<\/p>\n<p><i>\u2026and the worst thing?<\/i><br \/>\nThe days are very long. Since we\u2019re only two people, we\u2019re always here. Most often, that\u2019s germinated <b>byg<\/b> (barley) that\u2019s been roasted in various ways. You crush that malt and pour hot water on it to extract the <b>smag<\/b> (taste) and the sugar. Then you pour everything\u00a0into another <b>kar<\/b> (vat) in order to boil it with some <b>humle<\/b> (hop). You cool the brew\u00a0down, before pouring\u00a0it into a <b>t\u00f8nde<\/b> (barrel), where\u00a0it is allowed to ferment for a month. Finally,\u00a0you add a bit of sugar, bottle the beer, close <b>flaskerne<\/b> (the bottles), and store them away for half a year. Then they\u2019re ready.<\/p>\n<p><i>How many kinds of beer have you got?<\/i><br \/>\nWe make 16 to 17 different kinds of beer a year, including seasonal beers such as <a href=\"https:\/\/blogs.transparent.com\/danish\/2013\/12\/14\/oh-when-the-nisser\/\"><b>jule\u00f8l<\/b><\/a> (Xmas beer) and <b><a href=\"https:\/\/blogs.transparent.com\/danish\/2012\/04\/07\/danish-easter\/\">p\u00e5ske\u00f8l<\/a>\u00a0<\/b>(Easter beer) and <b>h\u00f8stbryg <\/b>(harvest brew).<\/p>\n<p><i>What\u2019s your <\/i><b><i>yndlings\u00f8l<\/i><\/b><i> (favourite beer)?<\/i><br \/>\nI think it\u2019s a <a href=\"https:\/\/blogs.transparent.com\/danish\/2016\/03\/26\/danish-in-a-glass-of-beer\/\"><strong>classic<\/strong><\/a> with <b>hyldeblomst<\/b> (elderflower).<\/p>\n<p><i>How is it to run a business on such a small place as <a href=\"https:\/\/www.visitsamsoe.dk\">Sams\u00f8<\/a>?<\/i><br \/>\nFor people like us, who sell a locally produced article, it\u2019s a huge advantage. People come here to buy a speciality that\u2019s been made on the very place where they\u2019re <b>p\u00e5 ferie<\/b> (on holiday)!
