Like many other European countries, Denmark was recently hit by a <strong>hedeb\u00f8lge<\/strong> [hethebolyeh] (heatwave) with <strong>temperaturer<\/strong> exceeding 30 <b>grader<\/b> (\u00b0C). Fortunately, Danes have many remedies to cool down \u2013 one of them being the <b>s\u00f8d og syrlig<\/b> (sweet and freshly sour) dessert known as <b>koldsk\u00e5l<\/b>.<\/p>\n<p><b>Koldsk\u00e5l<\/b> &#8211; pronounced &#8220;coll skawl&#8221; &#8211; means <i>cold bowl <\/i>and is a yummy refreshment for sunny days in the garden (it&#8217;s more of a stay-at-home treat than a beach party ingredient). Eat it after a warm <b>m\u00e5ltid<\/b> (meal) or independently. <b>Koldsk\u00e5l<\/b> comes in many different varieties, but is most often a <b>k\u00e6rnem\u00e6lkskoldsk\u00e5l<\/b>, based on <b>k\u00e6rnem\u00e6lk<\/b> &#8211; a kind of buttermilk, which can be bought in any Danish store.<\/p>\n<ul>\n<li>Here is one typical <b>opskrift<\/b> (recipe) <b>til 4 personer<\/b>:<\/li>\n<li>1 litre of <b>k\u00e6rnem\u00e6lk<\/b> (your local buttermilk might work also)<\/li>\n<li>3-5 <b>\u00e6ggeblommer<\/b> (yolks)<\/li>\n<li>6 <b>spiseskeer sukker<\/b> (table spoons of sugar)<\/li>\n<li>a dash of <b>vaniljesukker<\/b> (vanilla sugar)<\/li>\n<li>a pinch of freshly squeezed <b>citronsaft<\/b> (lemon juice)<\/li>\n<\/ul>\n<p><b>Pisk<\/b> (whip) the yolks with the sugar and vanilla sugar until it&#8217;s fully liquid. <b>Tils\u00e6t<\/b> (add) <b>k\u00e6rnem\u00e6lk<\/b> while stirring. Add lemon juice to taste. \ud83d\ude42<\/p>\n<p>The above recipe can be modified according to your individual preferences &#8211; for example some people may use fewer or more <b>\u00e6g<\/b> (eggs), skip the lemon juice or use <b>tykm\u00e6lk<\/b> (soured milk) instead of <b>k\u00e6rnem\u00e6lk<\/b>. On some occasions, the dish is also adorned with <b>jordb\u00e6r<\/b> (strawberries).
