I don\u2019t know what the rest of the world looks like, but here in Maastricht there can be no doubt that it is winter.\u00a0 The snow has been falling faster \u2013 quite literally \u2013 than they can plow it up, and Dutch rail travelers and road commuters have been experiencing some unnatural delays.\u00a0 Fortunately, at home, we now have an excuse to eat one of the classic dishes of the Dutch keuken<\/em> \u2013 boerenkool met worst \u2013<\/em> made with kale, potatoes and smoked sausage. \u00a0I had my dad explain the steps \u2013 in Dutch \u2013 while he was making it the other night.\u00a0 Below, boerenkool met worst<\/em>, in five parts. \u00a0Winter, hit us with your best shot.<\/p>\n

To make boerenkool met worst<\/em>, you need about a kilo of potatoes and about a kilo of kale\u2013 which is sold in Dutch supermarkets pre-washed and \u2013chopped.\u00a0 Peel the potatoes and cook them until you can easily pierce them with a fork \u2013 about twenty or twenty-five minutes.\u00a0 At the same time, cook the boerenkool,<\/em> with the worst<\/em> in the same pot, until the small puncture holes you\u2019ve made in the worst<\/em> burst open.\u00a0 Drain the potatoes and the kale, and mash them together.\u00a0 Serve with the worst on the side, and add butter, salt and pepper to taste.<\/p>\n
