So it might not come as a surprise that I\u2019d hunt down a recipe like that, when you know that it\u2019s <strong><em>un g\u00e2teau<\/em><\/strong><em> tr\u00e8s, tr\u00e8s sp\u00e9cial.<\/em><\/p>\n<p>This is <strong><em>une recette extraordinaire<\/em><\/strong> from my French <em>soeur d\u2019accueil<\/em> (host sister). <em>\u00c0 No\u00ebl <\/em>(at Christmas), <em>quand j\u2019habitais chez sa famille <\/em>(when I lived with her family), <em>elle m\u2019a offert <strong>un livre de cuisine<\/strong> de ses recettes personnelles <\/em>(she gave me a <strong>cookbook<\/strong> of her personal recipes).<\/p>\n<p><em>Toutes ses recettes sont g\u00e9niales, <\/em>but there\u2019s one I make at every possible opportunity, every plausible occasion for cake. I first made it for <em>l\u2019anniversaire de mon copain <\/em>(my boyfriend\u2019s birthday), <em>quand on vivait \u00e0 Paris<\/em>. <em>Il avait invit\u00e9 plein de Fran\u00e7ais \u00e0 la f\u00eate <\/em>(he invited lots of French people to the party), so the pressure was seriously on.<\/p>\n<p>I <strong>browned <\/strong>the butter. I <strong>beat the crap<\/strong> out of the egg whites\u2014in one direction only. I incorporated each ingredient with a third hand, while the other two maintained consistent stirring (in one direction only). I folded <em>le tout <\/em>into a specially bought <strong><em>moule <\/em><\/strong>(mold) <em>et voil\u00e0!<\/em><\/p>\n<p>No cake. It got eaten too fast<\/p>\n<p><em>Financiers* <\/em><\/p>\n<p>Cuisson : 10 min <em>Cook time\u00a0: 10 min<\/em><\/p>\n<p>170g de beurre<br \/>\n5 blancs (=155g)<br \/>\n250g de sucre glace<br \/>\n135g d&#8217;amandes en poudre<br \/>\n55 g de farine<\/p>\n<ul>\n<li>Faites un beurre noisette. \u00a0<em>Make a brown butter. So French, the recipe, no\u00a0? <\/em><em>In translation, melt butter in a saucepan until the milk solids burn and sink to the bottom, and you have clarified, brown butter.<\/em><\/li>\n<li>M\u00e9langez le sucre, les amandes et la farine dans un bol. <em>Mix the sugar, the almonds and the flour in a bowl.<\/em><\/li>\n<li>Incorporez les blancs d&#8217;\u0153ufs en travaillant \u00e0 la spatule, puis le beurre noisette, chaud. <em>Incorporate the egg whites with a spatula (remember to only turn in one direction\u00a0!), then the brown butter, hot.<\/em><\/li>\n<li>Beurrez les moules au pinceau. <em>Butter the mold with a pastry brush\u2014I don\u2019t own one of these and it hasn\u2019t ruined the recipe yet. <\/em><\/li>\n<li>Remplissez \u00e0 mi hauteur \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re. <em>Fill halfway with the aid of a spoon. <\/em><\/li>\n<li>Posez sur la plaque et enfournez pour 5 min \u00e0 240\u00b0c puis 5 min \u00e0 200\u00b0c. <em>Place on the cooktop (\u00a0?) and bake for 5 min at 464<\/em>\u00b0<em>F then 5 min at 392<\/em>\u00b0<em>F. <\/em><\/li>\n<li>Eteignez le four, attendez 5 min avant de sortir les financiers, d\u00e9moulez chaud. <em>Turn off the oven, wait 5 min before taking out the financier(s), unmold them while hot<\/em>.<\/li>\n<\/ul>\n<p><em>*<\/em>Depending on the <em>moule <\/em>you use, you might make many little <em>financiers <\/em>(supposedly they resemble gold bars, <em>dont le nom<\/em>) or one regular cake. <em>Moi j\u2019utilise un moule comme <a href=\"http:\/\/www.williams-sonoma.com\/products\/nonstick-round-fluted-tart-pan\/?pkey=cpie-pans-tart-pans\">\u00e7a<\/a><\/em>.<\/p>\n<p><em>J\u2019esp\u00e8re que \u00e7a vous pla\u00eet! <\/em>I hope you like it :).<\/p>\n","protected":false},"excerpt":{"rendered":"<img width=\"350\" height=\"233\" src=\"https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2010\/08\/Financier-Fig-tart-350x233.jpg\" class=\"attachment-post-thumbnail size-post-thumbnail wp-post-image tmp-hide-img\" alt=\"\" decoding=\"async\" loading=\"lazy\" srcset=\"https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2010\/08\/Financier-Fig-tart-350x233.jpg 350w, https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2010\/08\/Financier-Fig-tart.jpg 500w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><p>Je viens de passer (I just spent) toute la soir\u00e9e \u00e0 fouiller dans tout mon appart pour une recette (the whole evening searching my whole apartment for a recipe).
