{"id":19253,"date":"2013-05-30T12:37:23","date_gmt":"2013-05-30T10:37:23","guid":{"rendered":"https:\/\/blogs.transparent.com\/french\/?p=19253"},"modified":"2017-10-20T14:52:29","modified_gmt":"2017-10-20T12:52:29","slug":"french-summer-dessert-cherry-almond-clafoutis","status":"publish","type":"post","link":"https:\/\/blogs.transparent.com\/french\/french-summer-dessert-cherry-almond-clafoutis\/","title":{"rendered":"French Summer Dessert: Cherry-Almond Clafoutis"},"content":{"rendered":"<p>Nothing like a tasty French dessert with plenty of\u00a0<strong><em>cerises <\/em><\/strong>(cherries) and <em><strong>amandes<\/strong><\/em> (almonds) to kickstart the Summer!<\/p>\n<p>Here&#8217;s how to prepare it, <strong><em>mes amis<\/em><\/strong>:<\/p>\n<p>Put a rack in the middle of an oven and heat it up to 350\u00b0F.<\/p>\n<p>Put in a large bowl 3 cups of small fresh sweet or sour cherries\u00a0with 1\/2 Tbs. cherry syrup. Set aside while tossing periodically, for about half an hour.<\/p>\n<p>At the same time, scatter 1\/3 cup of sliced almonds on a baking sheet and toast until light golden,\u00a0turning from time to time, for about 4 minutes, then set aside.<\/p>\n<p>Now, back to the oven, increase the temperature up to 400\u00b0F.<\/p>\n<p>Grease a gratin dish with 1\/2 Tbs. of unsalted butter.<\/p>\n<p>Mix the following in a bowl:<\/p>\n<ul>\n<li>a cup of whole milk<\/li>\n<li>2\/3 cup of flour,<\/li>\n<li>1\/4 cup plus 1 to 2 Tbs. granulated sugar<\/li>\n<li>1\/4 cup for sweet cherries; 5 Tbs. for sour<\/li>\n<li>1\/4 cup heavy cream<\/li>\n<li>3 eggs<\/li>\n<li>1\/8 tsp. pure almond extract<\/li>\n<li>1\/8 tsp. table salt<\/li>\n<\/ul>\n<p>To allow air in, mix on medium speed for 5 minutes.<\/p>\n<p>Drain the cherries then stir the liquid into the batter.<\/p>\n<p>Sprinkle the cherries in the dish and pour the batter on top.<\/p>\n<p>Bake for 15 minutes.<\/p>\n<p>Sprinkle the toasted almonds and one Tbs. of sugar on top<\/p>\n<p>Dot the surface with pieces of one Tbs. of butter.<\/p>\n<p>Bake it until you obtain a golden-brown, which will take about 40 minutes.<\/p>\n<p>Then put into a rack, and let it cool for half an hour.<\/p>\n<p>Serve warm or at room temperature, and announce:<\/p>\n<p style=\"text-align: center;\">\n<p style=\"text-align: center;\"><iframe loading=\"lazy\" title=\"One-Pan Pasta &amp; Cherry-Almond Clafoutis | Bon App\u00e9tempt | PBS Digital Studios\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/rQQpZaZh2gQ?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>BonAppetemptShow gave it a good try, check it out here.<br \/>\nThe <em>bonne vivante\u00a0<\/em>lady also noted that the name of Judi Dench (the actress who plays &#8220;M&#8221;, <a href=\"https:\/\/blogs.transparent.com\/french\/boum-the-french-song-featured-in-the-new-007-movie-skyfall\/\">James Bond<\/a>&#8216;s grumpy boss) rhymes with French.<br \/>\n<em>007 <\/em>would probably prefer &#8220;wench&#8221; \ud83d\ude42<\/strong><\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>And by the way, it&#8217;s <em>un, deux, trois, quatre, cinq&#8230; six<\/em><\/strong><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<img width=\"350\" height=\"233\" src=\"https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2013\/05\/8031003446_840826325e-350x233.jpg\" class=\"attachment-post-thumbnail size-post-thumbnail wp-post-image tmp-hide-img\" alt=\"\" decoding=\"async\" loading=\"lazy\" srcset=\"https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2013\/05\/8031003446_840826325e-350x233.jpg 350w, https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2013\/05\/8031003446_840826325e.jpg 500w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><p>Nothing like a tasty French dessert with plenty of\u00a0cerises (cherries) and amandes (almonds) to kickstart the Summer!
