Beginning in the 17<sup>th<\/sup> century, gastronomy reached new heights among <b>la noblesse<\/b> (the nobility) and the art of fine cuisine was refined over the course of several centuries. The stereotype of a French chef often seen in cartoons does not stray too far from the truth. Today, most of the top chefs in the world can claim to have honed their skills in the finest culinary schools in France and are intimately familiar with the <a href=\"http:\/\/www.amazon.com\/Larousse-Gastronomique-Prosper-Montagne\/dp\/0609609718\" target=\"_blank\" rel=\"noopener\"><b>Larousse Gastronomique<\/b><\/a>, the bible of French cuisine first printed in 1938.<\/p>\n<p>Today, I\u2019d like to introduce you to a typically French dessert known as <i>cr\u00eapes Suzette<\/i>. You are no doubt already familiar with cr\u00eapes, a thin pancake famous for its versatility. <b>Que pr\u00e9f\u00e9rez-vous<\/b> (What do you prefer)? <b>Sucr\u00e9 ou sal\u00e9<\/b> (sweet or savory)? <b>Chaud ou froid <\/b>(hot or cold)? Cr\u00eapes can be eaten for <b>le petit d\u00e9jeuner<\/b> (breakfast), <b>le d\u00e9jeuner<\/b> (lunch) or <b>le d\u00eener<\/b> (dinner).<\/p>\n<p>Cr\u00eapes Suzette are unique in that they are made with <a href=\"http:\/\/en.grand-marnier.com\" target=\"_blank\" rel=\"noopener\"><i>Grand Marnier <\/i><\/a>(which can be substituted with orange Cura\u00e7ao) liqueur and are served <b>flamb\u00e9<\/b> (flamed). They are always sweet are served as a dessert <b>\u00e0 la fin du repas<\/b> (at the end of the meal). The name <i>Suzette<\/i> comes from a special kid of \u201cbutter\u201d called <i>beurre Suzette<\/i><b> <\/b>made of <b>sucre<\/b> (sugar), <b>beurre<\/b> (butter), <b>orange ou citron<\/b> (orange or lemon) and Grand Marnier liqueur. The cr\u00eapes in cr\u00eapes Suzette are traditional cr\u00eapes made with flour, eggs and milk but it is the process of bathing them in beurre Suzette and then flaming them that turns them into cr\u00eapes Suzette.<\/p>\n<p>There are two schools of thought regarding the flaming process. Some believe that cr\u00eapes cannot be called cr\u00eapes Suzette unless they have been flamed while others believe the flaming process is merely for show. Cr\u00eapes Suzette are delicious either way <b>et<\/b> <b>c\u2019est \u00e0 vous de choisir<\/b> (and the choice is yours).<\/p>\n<p>Keep in mind that using Grand Marnier liqueur is <b>la m\u00e9thode traditionelle<\/b> (the traditional method) of preparing cr\u00eapes Suzette. Grand Marnier is an orange-flavored Cognac made from Cognac brandy, sugar and bitter orange essence. As mentioned previously, Cura\u00e7ao liqueur can be used in place of Grand Marnier thanks to its citrus flavor. Other liqueurs can be added such as <a href=\"http:\/\/www.cointreau.us\" target=\"_blank\" rel=\"noopener\">Cointreau<\/a>, kirsch, etc. Using signature French liqueurs like Grand Marnier and Cointreau will bring out the classic Suzette flavors but experiment with different liqueurs as there are no hard and fast rules.
