Although onion soups date back <b>du temps des Romains<\/b> (to Roman times), the French take on onion soup dates back to <b>le 18\u00e8me si\u00e8cle<\/b> (the 18<sup>th<\/sup> century). The soup is made from <b>bouillon de b\u0153uf<\/b> (beef broth) to which you add <b>des oignons caram\u00e9lis\u00e9s<\/b> (caramelized onions) and du <b>Gruy\u00e8re r\u00e2p\u00e9<\/b>\u00a0(grated Gruy\u00e8re) topped with <b>une tranche de pain<\/b> <b>grill\u00e9<\/b> (a slice of toasted bread) called a \u201ccrouton.\u201d<\/p>\n<p>There are a number of variations of French onion soup but the core elements remain the same: broth, cheese and bread. Below is a simple and quick <b>recette<\/b> (recipe) that will introduce you to this typical French dish. Although it lacks meat, this soup is still hearty and is often served as an <b>entr\u00e9e<\/b> (appetizer) before <b>le plat principal<\/b> (the main dish).<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>2 \u00bd large yellow\u00a0onions cut into thin slices<\/p>\n<p>1 Tbsp. vegetable oil<\/p>\n<p>2 Tbsp. flour<\/p>\n<p>\u00bc tsp. sugar<\/p>\n<p>3 \u00bd cups of beef broth<\/p>\n<p>\u00bd cup of grated Gruy\u00e8re (can be substituted for another kind of Swiss cheese if Gruy\u00e8re is difficult to find)<\/p>\n<p>\u00bc cup of sherry, brandy, vermouth or white wine<\/p>\n<p>Toasted French bread cut into slices<\/p>\n<p><strong>Directions<\/strong>:<\/p>\n<p>Heat oil in pan over medium heat. Add onions, reduce heat and let cook for 15 minutes. Remove cover. Increase heat to medium, add sugar and let cook until onions are caramelized. Add flour and stir for one minute. Add broth and spirit\/wine and bring to a boil. Reduce heat to low and cook for 10 minutes. Top with bread and Gruy\u00e8re.<\/p>\n<p><b>D\u00e9gustez en famille ou avec des amis!
