We have a whole menu planned for <strong>le R\u00e9veillon<\/strong><em>\u00a0<\/em>(<em>Christmas Eve**)<\/em> but since <strong>m<\/strong><strong>a belle-famille vient du <a href=\"https:\/\/blogs.transparent.com\/french\/because-you-cant-always-have-paris-in-the-springtime\/\" target=\"_blank\" rel=\"noopener\">Qu\u00e9bec<\/a><\/strong> (<em>My in-laws are from Qu\u00e9bec)<\/em> every meal . . . whether it&#8217;s <strong>le repas du R\u00e9veillon de No\u00ebl\u00a0 <\/strong>(<em>Christmas Eve dinner)<\/em> or <strong>le petit-d\u00e9jeuner du lendemain<\/strong> (<em>or breakfast the next day<\/em>) . . . has to include a couple of classic Canadian dishes. Fortunately for us, the staple favorites can easily be prepared ahead . . . which is just what we did this weekend!<\/p>\n<p>And for your gastronomic pleasure, here are three classics you can try if you want a little taste of Qu\u00e9bec for your own holidays (or any time!)<\/p>\n<div id=\"attachment_25420\" style=\"width: 360px\" class=\"wp-caption alignleft post-item__attachment\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-25420\" class=\"size-medium wp-image-25420\" src=\"https:\/\/blogs.transparent.com\/french\/wp-content\/uploads\/sites\/3\/2016\/12\/Creton_du_Porc-350x232.jpg\" alt=\"Too busy to make cretons? You can always buy some! ^^<\/p><\/div>\n<p><strong>Les cretons de porc<\/strong> \/ <em>pork spread<br \/>\n<\/em>Cretons (also &#8216;gortons&#8217;) is a classicly Qu\u00e9b\u00e9cois spread usually served cold on bread or toast. It is made from ground pork . . . the fattier the better. While it can be quite hard sometimes these days to find really good, fatty pork, you can still whip this tasty savory spread up for your breakfasts.<\/p>\n<p>This great article from a few years back has more details about the history of this &#8220;<a href=\"http:\/\/www.npr.org\/sections\/thesalt\/2012\/12\/25\/167737131\/canadian-peanut-butter-connects-mainers-to-their-acadian-roots\" target=\"_blank\" rel=\"noopener\">Canadian Peanut Butter<\/a>&#8221; along with a good recipe.<\/p>\n<p>For the next two, these are the original recipes from <strong>ma belle-famile <\/strong>so there not super precice . . . but practice makes perfect. Pay around with them a bit to find the perfect recipe for you.<\/p>\n<p><strong>La tourti\u00e8re <\/strong>\/ <em>pork pie<br \/>\n<\/em>Tourti\u00e8re is a meat pie that, like creton, is made from pork.\u00a0 Unlike cretons, <strong>la<\/strong> <strong>tourti\u00e8re <\/strong>traces its roots back to Europe where you can still find it in parts of France.<\/p>\n<p><strong>600 g de porc hach\u00e9<\/strong> \/ <em>about 1 lb of ground pork<\/em><br \/>\n<strong>1 oignon, hach\u00e9<\/strong> \/ <em>1 onion, minced<\/em><br \/>\n<strong>sel et poivre<\/strong> \/ <em>salt and pepper<\/em><br \/>\n<strong>1\/2 cuill\u00e8res \u00e0 caf\u00e9 de muscade moulue<\/strong> \/ <em>1\/2 teaspoon of ground nutmeg<\/em><br \/>\n<strong>1\/2 cuill\u00e8res \u00e0 caf\u00e9 de clou de girofle moulu<\/strong> \/ <em>1\/2 teaspoon of ground glove<\/em><br \/>\n<strong>1\/4 tasse d&#8217;eau bouillante<\/strong> \/ <em>1\/4 cup of boiling water<br \/>\n<\/em><strong>2 &#8211; 3 cuill\u00e8res a soupe de pur\u00e9e de pomme de terre \/ <\/strong><em>2 &#8211; 3 soup spoons of mashed potato<\/em><\/p>\n<p>Mix all the ingredients in a pot and simmer over low to medium heat uncovered for approximately 20 minutes. Let the mixture cool a little and then pour equal amounts into two separate pie crusts. Put a layer of crust on top and Bake in the oven at 375 for 30 minutes or until the crust is golden brown. Let cool and enjoy!<\/p>\n<p><strong>La tarte au sucre<\/strong> \/ <em>sugar pie<br \/>\n<\/em>La tarte au sucre is like really good peacan pie . . . without the peacans! As the name suggests, it&#8217;s also pretty sweet. I recommend having lots of <strong>glace \u00e0 la vanille<\/strong> (<em>vanilla ice cream<\/em>) handy to go along. For the filling:<\/p>\n<p><strong>2 tasses de cassonade<\/strong> \/ <em>2 cups of brown sugar<br \/>\n<\/em><strong>3 cuill\u00e8res \u00e0 soupe rase de farine<\/strong> \/ <em>3 level soup spoons of flour<br \/>\n<\/em><strong>1 tasse de lait<\/strong> \/ <em>one cup of milk<br \/>\n<\/em><strong>1\/2 tasse de cr\u00e8me<\/strong> \/ <em>1\/2 cup of cream<\/em><\/p>\n<p>Combine all the ingredients in a pot on the stove and heat up to just below boiling. <strong>Laisser mijoter 8 \u00e0 10 minutes en brassant constamment. <\/strong>(<em>Cook for 8 &#8211; 10 minutes stirring constantly . . . or until it thickens up . . . be careful not to let it boil.) <\/em>Let the mixture cool a little and then pour equal amounts into two separate pie crusts. Some people will but a layer of crust on top, but that is optional. Bake in the oven at 375 for 30 minutes or until the crust is golden brown.
