It is called \u201cclean\u201d (<strong>\u03ba\u03b1\u03b8\u03b1\u03c1\u03ac<\/strong>, <em>kathara<\/em>) because the Christian believers purify themselves spiritually and physically by eliminating the consumption of meat, eggs and dairy products and by abstaining from sin.<\/p>\n<p><strong>Customs<\/strong><\/p>\n<p>Each region has its own customs but generally Clean Monday is celebrated outdoors. This celebration is called <strong>\u03ba\u03bf\u03cd\u03bb\u03bf\u03c5\u03bc\u03b1<\/strong> (<em>koulouma<\/em>). People fly kites and have picnics. They eat special dishes such as seafood (<strong>\u03b8\u03b1\u03bb\u03b1\u03c3\u03c3\u03b9\u03bd\u03ac<\/strong>, <em>thalassina<\/em>), legumes (<strong>\u03cc\u03c3\u03c0\u03c1\u03b9\u03b1<\/strong>, <em>ospria<\/em>) especially giant beans (<strong>\u03c6\u03b1\u03c3\u03cc\u03bb\u03b9\u03b1 \u03b3\u03af\u03b3\u03b1\u03bd\u03c4\u03b5\u03c2<\/strong>, <em>fasolia gigantes<\/em>), fish roe dip (<strong>\u03c4\u03b1\u03c1\u03b1\u03bc\u03bf\u03c3\u03b1\u03bb\u03ac\u03c4\u03b1<\/strong>, <em>taramosalata<\/em>), vegetables (<strong>\u03bb\u03b1\u03c7\u03b1\u03bd\u03b9\u03ba\u03ac<\/strong>, <em>lahanika<\/em>) and an azyme bread called <strong>\u03bb\u03b1\u03b3\u03ac\u03bd\u03b1<\/strong> (<em>lagana<\/em>). As a sweet dessert, they eat a type of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Halva\">halva <\/a>(<strong>\u03c7\u03b1\u03bb\u03b2\u03ac\u03c2<\/strong>).<br \/>\nIn Athens the celebrations take place at the Philopappou Hill (<strong>\u039b\u03cc\u03c6\u03bf\u03c2 \u03a6\u03b9\u03bb\u03bf\u03c0\u03ac\u03c0\u03c0\u03bf\u03c5<\/strong>, <em>lofos filopapou<\/em>). In 1990, the celebration is held under the auspices of the Municipality of Athens and many events, such as traditional Greek dances, are organized.
