Today I will share with you a recipe of one of the most famous Greek appetizers: \u03c4\u03b6\u03b1\u03c4\u03b6\u03af\u03ba\u03b9! For those of you who are not familiar with Greek food, tzatziki is a dip made of yogurt, cucumber and garlic. You will need the following ingredients:<\/p>\n<h2>\u03a5\u03bb\u03b9\u03ba\u03ac (Ingredients)<\/h2>\n<p>&#8211; 400 \u03b3\u03c1. \u03c3\u03c4\u03c1\u03b1\u03b3\u03b3\u03b9\u03c3\u03c4\u03cc \u03b3\u03b9\u03b1\u03bf\u03cd\u03c1\u03c4\u03b9 (strained yogurt)<\/p>\n<p>&#8211; 1 \u03b1\u03b3\u03b3\u03bf\u03cd\u03c1\u03b9 (cucumber)<\/p>\n<p>&#8211; 3-4 \u03c3\u03ba\u03b5\u03bb\u03af\u03b4\u03b5\u03c2 \u03c3\u03ba\u03cc\u03c1\u03b4\u03bf (garlic cloves)<\/p>\n<p>&#8211; 2 \u03ba\u03bf\u03c5\u03c4\u03b1\u03bb\u03b9\u03ad\u03c2 \u03c4\u03b7\u03c2 \u03c3\u03bf\u03cd\u03c0\u03b1\u03c2 \u03be\u03cd\u03b4\u03b9 (2 tbl spoons of vinegar)<\/p>\n<p>&#8211; \u03b1\u03bb\u03ac\u03c4\u03b9 (salt)<\/p>\n<p>&#8211; \u03b5\u03bb\u03b1\u03b9\u03cc\u03bb\u03b1\u03b4\u03bf (olive oil)<\/p>\n<h2>Extras:<\/h2>\n<p>&#8211; \u03bc\u03b9\u03c3\u03cc \u03bc\u03b1\u03c4\u03c3\u03ac\u03ba\u03b9 \u03ac\u03bd\u03b9\u03b8\u03bf \u03ba\u03bf\u03bc\u03bc\u03ad\u03bd\u03bf \u03c3\u03b5 \u03bc\u03b9\u03ba\u03c1\u03ac \u03ba\u03bf\u03bc\u03bc\u03b1\u03c4\u03ac\u03ba\u03b9\u03b1 (half a bunch of dill finely chopped)<\/p>\n<p>&#8211; \u03ba\u03b1\u03c5\u03c4\u03b5\u03c1\u03ae \u03c0\u03ac\u03c0\u03c1\u03b9\u03ba\u03b1 (hot paprika)<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Notes on the ingredients<\/strong><\/p>\n<p>&#8211; It is very important to use strained yogurt (plain or low fat) that gives tzatziki a nice, thick and \u201cvelvety\u201d texture.<\/p>\n<p>&#8211; You can add or remove clove, depending on how strong you want the taste to be.<\/p>\n<p>&#8211; Apple vinegar can be used instead of vinegar.<\/p>\n<p>&#8211; Dill is an extra but it matches perfectly the combination of yogurt, garlic and cucumber. Personally, I never make tzatziki with no dill.<\/p>\n<p>&#8211; Hot paprika is not a must but it adds a spicy taste.<\/p>\n<p>&nbsp;<\/p>\n<h2>\u0395\u03ba\u03c4\u03ad\u03bb\u03b5\u03c3\u03b7 (Preparation)<\/h2>\n<p>&#8211; \u03a4\u03c1\u03af\u03c8\u03c4\u03b5 \u03c4\u03bf \u03b1\u03b3\u03b3\u03bf\u03cd\u03c1\u03b9 \u03ba\u03b1\u03b9 \u03c3\u03c4\u03b1\u03b3\u03b3\u03af\u03be\u03c4\u03b5 \u03c4\u03bf \u03c0\u03bf\u03bb\u03cd \u03ba\u03b1\u03bb\u03ac. Grate the cucumber, let it strain very well and remove any liquid left by squeezing the small pieces. This is the most important thing to do.<\/p>\n<p>&#8211; \u03a4\u03c1\u03af\u03c8\u03c4\u03b5 \u03c4\u03bf \u03c3\u03ba\u03cc\u03c1\u03b4\u03bf \u03c3\u03b5 \u03c0\u03bf\u03bb\u03cd \u03bb\u03b5\u03c0\u03c4\u03ac \u03ba\u03bf\u03bc\u03bc\u03b1\u03c4\u03ac\u03ba\u03b9\u03b1. Grate the garlic in fine pieces.<\/p>\n<p>&#8211; \u0392\u03ac\u03bb\u03c4\u03b5 \u03cc\u03bb\u03b1 \u03c4\u03b1 \u03c5\u03bb\u03b9\u03ba\u03ac \u03c3\u03b5 \u03ad\u03bd\u03b1 \u03bc\u03c0\u03bf\u03bb. Stir the mixture with a spoon.<\/p>\n<p>&#8211; \u0394\u03bf\u03ba\u03b9\u03bc\u03ac\u03c3\u03c4\u03b5 \u03ba\u03b1\u03b9 \u03c0\u03c1\u03bf\u03c3\u03b8\u03ad\u03c3\u03c4\u03b5 \u03b1\u03bb\u03ac\u03c4\u03b9 \u03ae \u03be\u03cd\u03b4\u03b9, \u03b1\u03bd \u03c7\u03c1\u03b5\u03b9\u03ac\u03b6\u03b5\u03c4\u03b1\u03b9. Taste to add salt or vinegar, if needed.<\/p>\n<p>&#8211; \u03a0\u03c1\u03bf\u03c3\u03b8\u03ad\u03c3\u03c4\u03b5 \u03c4\u03b7\u03bd \u03c0\u03ac\u03c0\u03c1\u03b9\u03ba\u03b1. Add the paprika.<\/p>\n<p>&#8211; \u0392\u03ac\u03bb\u03c4\u03b5 \u03c4\u03bf \u03c4\u03b6\u03b1\u03c4\u03b6\u03af\u03ba\u03b9 \u03c3\u03c4\u03bf \u03c8\u03c5\u03b3\u03b5\u03af\u03bf. Put the tzatziki in the refrigerator.<\/p>\n<p>Let it cool for a couple of hours and serve it cold. You can use it as a dip for pita bread, crackers, or vegetable sticks, fried potatoes or anything else you like!
