This dish is very popular in North and usually served with Indian bread called Roti (\u0930\u094b\u091f\u0940) or Naan (\u0928\u093e\u0928 ) and you can serve it with cooked Basmati rice (\u091a\u093e\u0935\u0932 &#8211; Chaawal).<\/p>\n<p style=\"text-align: justify\">Let me show you how to make this dish at home.<\/p>\n<p style=\"text-align: justify\"><strong>Recipe Servings :<\/strong> 4 &#8211; 6<br \/>\n<strong>Recipe Cook Time : <\/strong>25 minutes<\/p>\n<h3 style=\"text-align: justify\"><strong>Ingredients:<\/strong><\/h3>\n<p style=\"text-align: justify\">2 tablespoons Ginger(\u0905\u0926\u0930\u0915 &#8211; Adarak)-Garlic (\u0932\u0939\u0938\u0941\u0928 &#8211; Lahsun) Paste<br \/>\n1 tablespoon ground coriander (\u0927\u0928\u093f\u092f\u093e &#8211; Dhaniya)<br \/>\n1\/4 teaspoon turmeric (\u0939\u0932\u094d\u0926\u0940 &#8211; Haldi)<br \/>\n1\/4 teaspoon red pepper (\u0932\u093e\u0932 \u092e\u093f\u0930\u094d\u091a &#8211; Lal Mirch)<br \/>\n1 cup water (\u092a\u093e\u0928\u0940 &#8211; Paani)<br \/>\n2 tablespoons peanut (\u092e\u0942\u0902\u0917\u092b\u0932\u0940 &#8211; Mungphali) oil<br \/>\n1 large green chilli (\u092e\u093f\u0930\u094d\u091a &#8211; Mirch), finely chopped<br \/>\n1 teaspoon cumin seeds (\u091c\u0940\u0930\u093e &#8211; Jeera)<br \/>\n1 small head cauliflower (\u092b\u0942\u0932\u0917\u094b\u092d\u0940 &#8211; Phoolgobhi), cut into small florets<br \/>\n3 small potato (\u0906\u0932\u0942 &#8211; Aloo), peeled and cut into 1\/2 inch thick slices (similar size to cauliflower)<br \/>\nSalt (\u0928\u092e\u0915 &#8211; Namak) as per taste (\u0938\u094d\u0935\u093e\u0926 &#8211; Svaad)<br \/>\n2 tablespoons freshly minced cilantro (\u0927\u0928\u093f\u092f\u093e &#8211; Dhaniya) leaves<br \/>\n1\/2 cup cloves garlic, whole for the Ginger-Garlic Paste<br \/>\n1\/2 cup fresh ginger, peeled, cut into 1\/2-inch slices for the Ginger-Garlic Paste<br \/>\n1\/4 cup Ghee (\u0918\u0940) or Canola or Sunflower oil<\/p>\n<h3 style=\"text-align: justify\"><strong>Method:<\/strong><\/h3>\n<p>1. Make thick Ginger-Garlic Paste by mixing garlic and ginger\u00a0in the mixer.<\/p>\n<p style=\"text-align: justify\">1. Mix the Ginger-Garlic Paste, coriander, turmeric, and 1\/2 cup water in a small bowl. This is a simple wet masala paste. Set aside.<\/p>\n<p>2. In a large pot, warm the oil over medium-high heat until shimmering but not smoking. Add the cumin seeds and wait until they&#8217;re done spluttering.<\/p>\n<p>3. Add the wet masala paste (careful, it will also splutter). Cook until the paste thickens, deepens in color slightly, and oil oozes out of the perimeter of the paste, about 2 minutes.<\/p>\n<p>4. Add the cauliflower and potatoes, stirring to coat the vegetables with the masala paste. Season with salt and add 1\/2 cup water. Cover and cook over medium heat 10 to 15 minutes. Then, remove the lid, stir, and cook until the cauliflower and potatoes are cooked through, about 5 minutes.
