In this dish, the eggplants\/brinjal (\u092c\u0948\u0902\u0917\u0928 &#8211; Baingan) sare used and are cooked with potatoes, onion, turmeric, green, garam masala and red chilies .<\/p>\n<p style=\"text-align: justify\">So what are you waiting for, let&#8217;s make this delicious dish at home.<\/p>\n<p style=\"text-align: justify\"><strong>Recipe Servings :<\/strong> 5<br \/>\n<strong>Recipe Cook Time : <\/strong>40 min (Cook time: 25 minutes and preparation time is 15 minutes)<\/p>\n<h3 style=\"text-align: justify\"><strong>Ingredients:<\/strong><\/h3>\n<p style=\"text-align: justify\">1 kg of eggplants \/ brinjals<br \/>\n5-6 potatoes, with each potato cut in 8 pieces<br \/>\n2 tablespoon vegetable oil<br \/>\n2 medium onions (peeled and minced)<br \/>\n2 teaspoons ground cumin<br \/>\n1 teaspoon ground turmeric<br \/>\n1 cup water<br \/>\n1 teaspoon garam masala<br \/>\n1\u20442 teaspoon salt<br \/>\n1\u20442 lemon (juiced) or 2 teaspoon mango powder<br \/>\n2 teaspoon chili powder<\/p>\n<h3 style=\"text-align: justify\"><strong style=\"text-align: justify\">Method:<\/strong><\/h3>\n<ol>\n<li style=\"text-align: justify\">Wash eggplants\/ brinjals and potatoes in water.<\/li>\n<li style=\"text-align: justify\">Slice the eggplants into 4 pieces vertically and then slice in smaller pieces (approx. 1 inch)<\/li>\n<li style=\"text-align: justify\">Slice the potatoes in medium size slices.<\/li>\n<li style=\"text-align: justify\">Heat cooking oil in a large pan.<\/li>\n<li style=\"text-align: justify\">Add onions and garlic and saut\u00e9 over a medium heat until onions turn golden brown (4-5 minutes).<\/li>\n<li style=\"text-align: justify\">Turn heat to medium-low.<\/li>\n<li style=\"text-align: justify\">Add the coriander, cumin, and turmeric.<\/li>\n<li style=\"text-align: justify\">Add salt, chili powder and stir for 30 seconds .<\/li>\n<li style=\"text-align: justify\">Add the potatoes and eggplant and stir for 1 minute.<\/li>\n<li style=\"text-align: justify\">Add 1 cup of water and stir for 20 seconds.<\/li>\n<li style=\"text-align: justify\">Add the mango powder or lemon juice and garam masala powder.<\/li>\n<li style=\"text-align: justify\">Cook covered for 20 minutes.<\/li>\n<li style=\"text-align: justify\">Remove the cover.<\/li>\n<li style=\"text-align: justify\">Optional: add the minced chili and ginger.<\/li>\n<li style=\"text-align: justify\">Stir and cook uncovered for 30 seconds.<\/li>\n<li style=\"text-align: justify\">Serve with boiled Basamati rice or naan or roti (round flat Indian breads).<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Aloo Baingan is a very popular and easy vegetarian north Indian dish.
