It is Christmas time and for the many <a href=\"https:\/\/blogs.transparent.com\/hindi\/how-to-spend-christmas-in-india\/\">Christians and Catholics<\/a> who make up about 2.5 percent of the population \u0906\u092c\u093e\u0926\u0940, it is an exciting time of year. These communities \u0938\u092e\u0941\u0926\u093e\u092f prepare food unlike the common food items one sees on menus in India or across the world.<\/p>\n<p>Their recipes have origins and heritage \u0935\u093f\u0930\u093e\u0938\u0924 in the British, Portuguese and Arabic influences. Chorizo &#8211; a sausage created by the Portuguese is flavored \u0938\u094d\u0935\u093e\u0926\u093f\u0937\u094d\u091f with Indian peppers and Goan vinegar. Rice garnished \u0938\u091c\u093e\u092f\u093e with raisins and nuts as well as fried crispy onions is a recipe handed down from Arabs who traveled to the shores \u0938\u092e\u0941\u0926\u094d\u0930 \u0915\u093e \u0915\u093f\u0928\u093e\u0930\u093e of the west coast of India.<\/p>\n<p>So also, the sweets and desserts that Goans, Mangaloreans and East Indians eat is different from gulab jamuns or jalebis. Most of the sweets are homemade \u0918\u0930 \u0915\u093e \u092c\u0928\u093e. Only recently have stores started selling these delicacies commercially\u0935\u094d\u092f\u093e\u0935\u0938\u093e\u092f\u093f\u0915 \u0930\u0942\u092a \u0938\u0947.<\/p>\n<p>So, what are these sweets? When we talk about sweets, it refers to cookies, sweet coconut \u0928\u093e\u0930\u093f\u092f\u0932 squares, cakes, marzipan \u092c\u093e\u0926\u093e\u092e \u0915\u093e \u092e\u0940\u0920\u093e \u0939\u0932\u0941\u0906 treats and chocolate goodies. Many Indian Christians who have Portuguese, or Anglo heritage engage in the tradition of Kuswar. This includes the East Indians (natives of Maharashtra), Goans and Mangaloreans.<\/p>\n<h2>So, what is Kuswar?<\/h2>\n<p>It is a tradition of sweet-making among the Christian community. The 400 years of Portuguese rule and added 250 years of British rule brought some beneficial cultural food. Indians took those cultures and made it their own. So, the figgy pudding was transformed into the fruit cake. Snowball or Christmas cookies transformed into nankhatais. And of course add marzipan, milk toffee and date and walnut bars.<\/p>\n<p>Preparations start at the beginning of december when families buy flour \u0906\u091f\u093e, semolina \u0938\u0942\u091c\u0940, dried fruit \u0938\u0942\u0916\u0947 \u092b\u0932 and nuts \u0915\u093e\u0937\u094d\u0920\u092b\u0932, sugar, butter or ghee. The local baniya or dry grocer is busy at this time filling in the orders for all these products. He would then send his staff in all directions to deliver the ingredients.<\/p>\n<p>Kuswar making is usually in the evening after the work day is done. People gather around the kitchen table and begin <a href=\"https:\/\/youtu.be\/uVfd1EXwGeo\">rolling out the kulkuls<\/a> or soaking the dry fruit in rum for the Christmas cake. Women sit around the table and make these sweets exchanging stories with wonderful Christmas music playing in the background.<\/p>\n<p>A favorite is Kulkuls. Kulkuls look like little pasta shells except they are sweetened with semolina, vanilla essence and sugar &#8211; and deep fried. Another Portuguese legacy is nevryo\u00a0 sweet puff pastries with a stuffing of coconut, raisins and brown sugar.<\/p>\n<h2>Recipe for Sweet puffs or Nevryo<\/h2>\n<div class=\"apartado\">\n<h4>Ingredients<\/h4>\n<ul>\n<li>1 kg All purpose flour<\/li>\n<li>100 gm Cashew Nuts \u0915\u093e\u091c\u0942<\/li>\n<li>\u00bd cup Gingelly \u0924\u093f\u0932<\/li>\n<li>100 gms of almonds \u092c\u093e\u0926\u093e\u092e, raisins \u0915\u093f\u0936\u092e\u093f\u0936 and pistachio \u092a\u093f\u0938\u094d\u0924\u093e each<\/li>\n<li>3 cups dessicated coconut<\/li>\n<li>\u00bd tbsp of cardamom \u0907\u0932\u093e\u092f\u091a\u0940 powder<\/li>\n<li>\u00bc tsp of nutmeg \u091c\u093e\u092f\u092b\u0932 powder<\/li>\n<li>1 \u00bd cup of powdered sugar \u091a\u0940\u0928\u0940<\/li>\n<li>3 tbsp of butter \u092e\u0915\u094d\u0916\u0928<\/li>\n<li>Salt \u0928\u092e\u0915 to taste<\/li>\n<\/ul>\n<h4>Preparation<\/h4>\n<p>Heat<span class=\"Y2IQFc\" lang=\"hi\">\u0917\u0930\u092e \u0915\u0930\u0947\u0902 <\/span>the butter and fry the gingelly, raisins and other nuts until golden brown. Roast <span class=\"Y2IQFc\" lang=\"hi\">\u092d\u0942\u0928\u0928\u093e<\/span>desiccated coconut with no oil. Mix \u090f\u0915 \u0938\u093e\u0925 \u092e\u093f\u0932\u093e\u0913 coconut, nuts, cardamom powder, powdered sugar, salt and nutmeg powder, and mix properly. Mix flour with some water and salt, knead properly and make a hard dough. Roll out the dough into circles. Add the filling in the middle of each circle, moisten the edges, fold them and press.
