A delicious Italian pudding made from two very humble ingredients: apples and leftover bread!

Perfect for us since we’re still working our way through the bumper crop that our two small apple trees have produced this summer. Here’s the recipe for this simple but very tasty budino di pane e mele:

Ingredienti:
50 grammi di uvetta; 2 uova; 100 grammi di zucchero; 1 limone non trattato; 350 ml di latte; 350 grammi di pane raffermo; 800 grammi di mele; 50 grammi di mandorle a fettine (facoltative); burro.

Ingredients:
50 grams of raisins; 2 eggs; 100 grams of sugar; 1 lemon (untreated); 350 ml of milk; 350 grams of leftover bread; 800 grams of apples; 50 grams of sliced almonds (optional); unsalted butter

Preparazione:

Imburrare una pirofila della capacità di 1,5 litri- Preriscaldare il forno a 180°.
Grease a 1.5 litres (2 pints) pudding basin. Preheat the oven to 180°C (350°F).

Sbucciare le mele, toglierci il torsolo e affettarle sottilmente. Spruzzarle con del succo di limone per non farle scurire.
Peel, core and thinly slice the apples. Sprinkle them with some lemon juice to prevent them from going brown.

Tagliare il pane a fette spesse circa 1 centimetro e rimuovere la crosta.
Cut the bread into slices about 1 cm thick and remove the crust.

Rompere le uova in una ciotola e aggiungervi lo zucchero, tenendone da parte un paio di cucchiai. Sbattere con una frusta finché gli ingredienti non saranno ben amalgamati. Aggiungere la scorza del limone grattugiata e il latte, e mescolare bene il tutto.
Break the eggs into a mixing bowl and add most of the sugar, keeping a couple of tablespoons aside. Whisk them until the ingredients are well mixed. Add the grated lemon rind and the milk, and mix everything thoroughly.

Disporre metà delle fette di pane sul fondo della pirofila e versarvi sopra un poco del composto di uova e latte. Coprire con le mele affettate, l’uvetta e le mandorle e da ultimo con fiocchetti di burro.
Put half of the bread slices on the bottom of the pudding basin and pour a little of the milk and egg mixture over it. Cover with the sliced apples, raisins, sliced almonds, and finally with knobs of butter.

Coprire col pane restante e versare il composto di latte e uova. Cospargere la superficie con fiocchetti di burro e lo zucchero messo da parte.
Top with the remaining bread and pour the milk and egg mixture over it. Spread the surface with knobs of butter and the sugar which you set aside.

Cuocere il budino in forno per 35 minuti o fino a quando non avrà un bel colore dorato. Lasciare riposare per 5 minuti prima di servire.
Bake the pudding for 35 minutes or until nice and gold. Leave it to rest for 5 minutes before serving.

    La ricetta sente deliziosa! Abbiamo anche tante mele quest’anno. Ma, ho una domanda. Mi sono accorto che nella ricetta hai usato entrambi “aggiungervi” e “aggiungere” e “versavi” e “versare”. Qual è la differenza?

      La ricetta é deliziosa, ti consiglio di provarla.
      Per quanto riguarda “aggiungervi” e “aggiungere” e “versavi” e “versare”, la sola differenza è che “-vi” è una variazione di “ci” = there. Perché in alcune frasi ho usato “vi” e altre no? Solo per una questione di stile, per variare e perché in alcuni casi mi sembrava che ‘suonasse’ meglio.
