{"id":1005,"date":"2011-10-17T12:36:33","date_gmt":"2011-10-17T12:36:33","guid":{"rendered":"https:\/\/blogs.transparent.com\/italian\/?p=1005"},"modified":"2011-10-17T12:36:33","modified_gmt":"2011-10-17T12:36:33","slug":"la-polenta","status":"publish","type":"post","link":"https:\/\/blogs.transparent.com\/italian\/la-polenta\/","title":{"rendered":"La Polenta"},"content":{"rendered":"<p align=\"justify\"><strong>La polenta<\/strong> (also known as <b>polenda<\/b> or <b>pulenda<\/b>) is an ancient dish made from cereal flour which is the traditional staple diet of the <strong>contadino<\/strong> (peasant farmer) especially in the northern Italian regions of&#160; <strong>Veneto<\/strong>, <strong>Lombardia<\/strong>, <strong>Trentino<\/strong>, and <strong>Friuli-Venezia Giulia<\/strong>.<\/p>\n<p align=\"justify\">The name <strong>polenta<\/strong> comes from the Latin word \u2018puls\u2019, a type of <strong>polenta di farina<\/strong> = polenta made with flour, which formed the basis of the diet of the antique peoples of the Italian peninsula. Before the discovery of America, and the subsequent introduction of <strong>granturco<\/strong> (maize) into Europe, polenta was made using flour produced from cereals such as barley, spelt, rye, millet, buckwheat and wheat. Nowadays, however, <strong>polenta<\/strong> is made almost exclusively from <strong>farina di granturco<\/strong> = maize flour.<\/p>\n<p align=\"justify\">Although in recent years polenta has become a gourmet food, it was for centuries the basic subsidence diet of the poor. A northern Italian proverb tells us: <\/p>\n<p align=\"justify\"><strong>Loda la polenta e mangia il pane<\/strong> =&#160; Praise polenta and eat bread (meaning that although polenta is a life saver for the poor and hungry it is less healthy and nutritious than bread).<\/p>\n<p align=\"justify\">I bet you think I\u2019m going to give you the recipe?
