Words and phrases highlighted in blue are explained in the accompanying <em><strong>Vocabolario e Grammatica<\/strong>.<\/em><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri;font-size: medium\">Salve lettori,<br \/>\nsono il giovane cuoco italiano, Mattia!<br \/>\nNello scorso articolo vi <strong><span style=\"color: #4f81bd\">parlai<\/span><\/strong> molto della mia passione per la cucina, ma non vi <span style=\"color: #4f81bd\"><strong>dissi<\/strong> <strong>da chi<\/strong> <strong>questa passione<\/strong> <strong>mi venne inculcata<\/strong><\/span>!<br \/>\nEbbene oggi vi parlo di Lui, un uomo che ha lavorato molto nel campo della gastronomia, e che oggi si gode la sua passione gastronomica nella sua grande bottega, mio padre!<\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri;font-size: medium\">Partendo dalle sue prime esperienze, mio padre Antonio Selicato, <strong><span style=\"color: #4f81bd\">si diplom\u00f2<\/span><\/strong>al Liceo Classico (per chi non lo sapesse nel Liceo Classico <strong><span style=\"color: #4f81bd\">si trattano<\/span><\/strong> materie storiche e lingue antiche come greco e latino) ma non sapeva che la sua passione per la gastronomia<span style=\"color: #9b00d3\"><strong> <span style=\"color: #4f81bd\">l&#8217;avrebbe portato<\/span><\/strong><\/span> dov&#8217;\u00e8 ora. Infatti dopo aver lavorato prima come salumiere e poi come responsabile generale di un Supermercato, insieme ad altri 2 soci, nel 1999 <strong><span style=\"color: #4f81bd\">divenne<\/span><\/strong> gestore della salumeria gastronomia e carni fresche <strong>\u201cSaporissimi<\/strong>\u201d.<\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri;font-size: medium\">Non potete immaginare quanto sia incoraggiante per una persona veder realizzata l&#8217;attivit\u00e0 che aspettava da anni, e <strong><span style=\"color: #4f81bd\">per la quale lui \u00e8 sempre stato portato<\/span><\/strong>.<br \/>\nDall&#8217;inizio dell&#8217;attivit\u00e0, la qualit\u00e0 del suo negozio \u00e8 stata crescente. Nel suo negozio vende prodotti di prima categoria come il Prosciutto di Parma <strong><span style=\"color: #4f81bd\">DOP<\/span><\/strong> o il <span style=\"color: #9b00d3\"><strong><span style=\"color: #4f81bd\">Grana Padano<\/span> <\/strong><span style=\"color: #000000\">DOP<\/span><\/span> stagionato 36 mesi, costosissimo!!! (una forma arriva a costare pi\u00f9 di 550,00 \u20ac!!!!!), e molti altri <strong><span style=\"color: #4f81bd\">prodotti <\/span><span style=\"color: #4f81bd\">sia nazionali sia tipici del posto<\/span><\/strong> come la <\/span><span style=\"font-family: Calibri\"><span style=\"font-size: medium\"><strong><span style=\"color: #9b00d3\"><span style=\"color: #4f81bd\">Nduja<\/span>.<br \/>\n<\/span><\/strong>Invece per quanto riguarda la carne fresca, mio padre ha conquistato il livello pi\u00f9 alto di tutta la citt\u00e0 di Foggia, scegliendo bene i suoi fornitori, e ci\u00f2 gli ha permesso di <strong><span style=\"color: #4f81bd\">accaparrarsi<\/span><\/strong> una clientela molto alta, soprattutto Ristoranti, vendendo carni di manzo argentino, o <strong><span style=\"color: #4f81bd\">la Scottona<\/span><\/strong><span style=\"color: #000000\"> (tipica del luogo)<\/span> e altre carni pregiate.<\/span><\/span><\/p>\n<p align=\"justify\"><strong><em><span style=\"font-family: Calibri;font-size: medium\">Vocabolario e Grammatica:<\/span><\/em><\/strong><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><span style=\"color: #9b00d3\"><strong><span style=\"color: #4f81bd\">parlai<\/span> <\/strong><\/span><span style=\"color: #000000\">= <strong>Passato Remoto <\/strong>(Historical Past), first person singular, of the verb <strong>parlare <\/strong>(to talk)<\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">dissi<\/span><\/strong> = <strong>Passato Remoto <\/strong>(Historical Past), first person singular, of the verb <strong>dire <\/strong>(to say)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">venne<\/span><\/strong> = <strong>Passato Remoto <\/strong>(Historical Past), third person singular, of the verb <strong>venire <\/strong>(to come), used here with the meaning of <strong>essere <\/strong>(to be)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><span style=\"color: #4f81bd\"><strong>da chi<\/strong> <strong>questa passione<\/strong> <strong>mi venne inculcata<\/strong><\/span><span style=\"color: #000000\"> =\u00a0 \u201cWho instilled this passion into me\u201d. Whereas in English the simple conditional is used to express something that would or should happen, in Italian we use the past conditional to express this concept, i.e. we say \u2018would have\u2019\/\u2018should have\u2019 instead of simple \u2018would\u2019\/\u2018should\u2019\u00a0 for example: <strong>mi ha detto che sarebbe venuto questo pomeriggio<\/strong> (he told me that he would come this afternoon), <strong>avevo sentito che il negozio sarebbe stato chiuso per qualche giorno<\/strong> (I\u2019d heard that the shop would be closed for a few days). Hence: <strong>ma non sapeva che la sua passione per la gastronomia<span style=\"color: #9b00d3\"> <span style=\"color: #4f81bd\">l&#8217;avrebbe portato<\/span><\/span> dov&#8217;\u00e8 ora<\/strong> (but he didn\u2019t know that his passion for gastronomy would take him to where he is today). <\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">divenne<\/span><\/strong> = <strong>Passato Remoto <\/strong>(Historical Past), third person singular, of the verb <strong>divenire <\/strong>(to become)<\/span><\/p>\n<p align=\"justify\"><span style=\"color: #4f81bd;font-family: Calibri\"><strong>per la quale lui \u00e8 sempre stato portato<\/strong><span style=\"color: #000000\">:<\/span><span style=\"color: #000000\"><strong>\u00a0<\/strong> <strong>essere portato\/a per qualcosa<\/strong> = to have a natural ability for something,hence: <\/span><span style=\"color: #000000;font-family: Calibri\"><strong>per la quale lui \u00e8 sempre stato portato<\/strong> (for which he\u2019s always had a natural ability)<\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><span style=\"color: #4f81bd\"><strong>DOP <\/strong><\/span><span style=\"color: #000000\">= <strong>Denominazione di Origine Protetta<\/strong>, an acronym used in the EU. The DOP &#8216;marchio&#8217; assures us that the complete process of cultivation \/ breeding, and manufacturing takes place in a determined geographical zone, i.e. that in which the product has its origins. <\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><span style=\"color: #9b00d3\"><strong><span style=\"color: #4f81bd\">Grana Padano<\/span> <\/strong><\/span><span style=\"color: #000000\">= a type of cheese very similar to the <strong>Parmigiano Reggiano<\/strong>, which is produced in the <strong>Pianura Padana<\/strong>, the big plain in the North of Italy.<\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">prodotti <\/span><\/strong><strong><span style=\"color: #4f81bd\">sia nazionali sia tipici del posto<\/span><\/strong> = the repetition <strong>sia \u2026 sia \u2026<\/strong> means \u201cboth \u2026 and\u201d, e.g. <strong>sia Marco sia Giovanni sono malati <\/strong>= \u201cboth Marco and Giovanni are ill\u201d. The variation <strong>sia \u2026 che \u2026 <\/strong>is also very common, e.g. <strong>sia Marco che Giovanni sono malati<\/strong><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><span style=\"color: #9b00d3\"><span style=\"color: #4f81bd\"><strong>Nduja <\/strong><\/span><\/span><span style=\"color: #000000\">= a sort of spreadable, very hot salami, typically from <strong>Calabria<\/strong><\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">accaparrarsi<\/span><\/strong> = to corner\/capture: <strong>accaparrarsi il mercato<\/strong> (to corner the market)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Calibri\"><strong><span style=\"color: #4f81bd\">la Scottona<\/span><\/strong><span style=\"color: #000000\"> is a young cow, less than 16 months old, which has never given birth.
