See the link at the end of Mattia\u2019s blog):<\/font><\/p>\n<p align=\"justify\">Salve cari lettori!    <br \/>Il ritorno dalle vacanze estive \u00e8 sempre traumatico, che tu sia uno studente o un lavoratore o un pensionato. Ma qui in Italia, lo si affronta sempre accompagnati da un clima fresco e umido, tipico del periodo pre-autunnale. E&#8217; con questa fresca brezza notturna che voglio parlarvi di un cibo che identifica l&#8217;Italia e che noi italiani mangiamo mattina e sera: la pasta! <\/p>\n<p align=\"justify\">Tutti sapete che la pasta \u00e8 <font color=\"#ff0000\">un impasto<\/font> di <font color=\"#000000\">farina <\/font>e acqua, ma non sapete come questi ingredienti mescolati diversamente tra di loro e in quantit\u00e0 e qualit\u00e0 diverse, possono dare una pasta sempre diversa. Oggi vi parlo delle <font color=\"#ff0000\">Orecchiette<\/font>, tipica pasta <font color=\"#ff0000\">casereccia<\/font> Pugliese che tutti potete fare. Le orecchiette sono delle caratteristiche &quot;orecchie&quot; fatte con la pasta, ma voglio dirvi di pi\u00f9: sono molto morbide e trattengono bene qualsiasi salsa con cui sono accompagnate.<\/p>\n<p align=\"justify\">Per ottenere un buon impasto, dobbiamo badare molto al tipo di acqua che usiamo, poich\u00e9 <font color=\"#ff0000\">un&#8217;acqua molto dura<\/font> cambia la consistenza e il gusto della pasta.<\/p>\n<p align=\"justify\">Parlando invece della farina, dobbiamo mescolarne ben due qualit\u00e0 differenti: la <font color=\"#ff0000\">farina tipo &quot;0&quot;<\/font> e la <font color=\"#ff0000\">semola di grano duro (rimacinata)<\/font>. Questa semola che aggiungiamo garantisce alla pasta una migliore consistenza, un bel colore pi\u00f9 giallo e un sapore pi\u00f9&#8230; di pasta! Ora si vede per\u00f2 l&#8217;esperienza tra un <font color=\"#000000\">principiante<\/font> ed un vero <font color=\"#ff0000\">pastaio<\/font>, e cio\u00e8 il modo in cui si impasta. Mescolare con le mani \u00e8 una vera e propria arte. Bisogna compattare il tutto, ma con delicatezza, <font color=\"#ff0000\">non troppa frenesia<\/font>, e cercare di non far formare <font color=\"#ff0000\">grumi<\/font>&#8230;<\/p>\n<p align=\"justify\">Il procedimento successivo non dipende tanto da voi, poich\u00e9 dovete solo lasciare riposare l&#8217;impasto ottenuto detto <font color=\"#ff0000\">\u201cpanetto\u201d<\/font> per pi\u00f9 di mezz&#8217;ora.<\/p>\n<p align=\"justify\">Dobbiamo dare ora la forma alla nostra pasta: per fare delle orecchiette, dobbiamo ottenere dei cordoni di pasta spessi quanto il vostro mignolo e lunghi abbastanza, poi tagliarli a piccoli cilindri di <font color=\"#000000\">1,5 cm<\/font> e pigiarli, tirando con il dito verso di voi e facendo arricciare la pasta <font color=\"#ff0000\">come una ventosa<\/font>. Spiegarlo a parole \u00e8 difficile ma guardando il video che vi allego a fondo pagina sar\u00e0 tutto pi\u00f9 semplice.<\/p>\n<p align=\"justify\">Le orecchiette ottenute vanno lasciate seccare per almeno una notte, distanti l\u2019una dall&#8217;altra, su di un tavolo senza luce diretta e preferibilmente coperte da una tovaglia. Una volta asciutte si possono bollire come qualsiasi pasta fresca. Il tempo di cottura varia a seconda del vostro gusto, pi\u00f9 o meno 5 minuti. Io consiglio sempre una <font color=\"#ff0000\">pasta &quot;al dente&quot;<\/font>, altrimenti si rischia di mangiare <font color=\"#ff0000\">una &quot;pappina&quot;<\/font> <font color=\"#ff0000\">molle<\/font>&#8230; Comunque \u00e8 abbastanza difficile cuocere la pasta al punto giusto, <font color=\"#ff0000\">ragion per cui<\/font> non sto a precisare come dovreste cuocerla \ud83d\ude42<\/p>\n<p align=\"justify\">Nel prossimo blog vedremo uno dei moltissimi ingredienti Pugliesi con cui le orecchiette si sposano!<\/p>\n<p align=\"justify\">P.S.
