Del gambo prendiamo solo la parte pi\u00f9 vicino alla cima, e scartiamo invece tutte le grandi foglie brutte e dure. Cercate di non buttare via troppe foglie, in quanto le prime volte \u00e8 difficile riconoscere quelle pi\u00f9 buone.<\/strong><\/p>\n<p align=\"justify\"><em>Cleaning the turnip tops:      <br \/>What you need from this vegetable is just the top, with the flower and the most tender leaves around it. We only use the very top bit of the stalk, and we throw away all the big hard leaves. Try not to throw away too many leaves, because at the beginning it&#8217;s difficult to recognize the best ones.<\/em><\/p>\n<p align=\"justify\"><strong>Passiamo ora alla preparazione del piatto:      <br \/>Tuffate le cime di rapa in acqua bollente per 15 minuti, o almeno fino a che le verdure non saranno morbide, poi toglietele dall&#8217;acqua con un mestolo forato. Portate di nuovo ad ebollizione l\u2019acqua in cui avete cotto la verdura e cuoceteci le orecchiette (questo dar\u00e0 pi\u00f9 sapore alle orecchiette). Le orecchiette fresche (come tutta la pasta fresca) hanno una cottura breve, 7 minuti al massimo, ma controllate di tanto in tanto assaggiando la pasta. <\/strong><\/p>\n<p align=\"justify\"><em>Let&#8217;s move on to the preparation of the dish:      <br \/>Put the turnip tops in boiling water for 15 minutes, or until they are tender, then remove them from the water with a slotted spoon. Bring the water in which you cooked the vegetables back to boiling point, and cook the orecchiette in it (this will give more flavour to them). Fresh orecchiette (as with all fresh pasta) have a short cooking time, maximum 7 minutes, however check from time to time by tasting the pasta.<\/em><\/p>\n<p align=\"justify\"><strong>Nel frattempo, in una padella grande mettete 2-3 cucchiai di olio extra vergine di oliva, lo spicchio d&#8217;aglio e 5 acciughe sott&#8217;olio fatte a pezzi di 1 cm ciascuno, e a fiamma media fate saltare per poco. Dopo aver scolato la pasta aggiungetela al condimento in padella e fate saltare il tutto con le cime di rapa e il peperoncino secco, se vi piace. <\/strong><\/p>\n<p align=\"justify\"><em>In the meantime, put 2-3 tablespoons of extra virgin olive oil, the garlic, and five anchovies chopped into 1 cm length, in a big frying-pan, and stir-fry for a few minutes over a medium heat.
