{"id":95,"date":"2009-02-20T17:09:58","date_gmt":"2009-02-20T21:09:58","guid":{"rendered":"https:\/\/blogs.transparent.com\/italian\/?p=95"},"modified":"2009-02-20T17:09:58","modified_gmt":"2009-02-20T21:09:58","slug":"chiacchiere-di-carnevale","status":"publish","type":"post","link":"https:\/\/blogs.transparent.com\/italian\/chiacchiere-di-carnevale\/","title":{"rendered":"Chiacchiere di Carnevale"},"content":{"rendered":"<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\">Here in Italy we have reached <strong>la Settimana Grassa<\/strong> (the fat week), which is the\u00a0final week\u00a0of <strong>Carnevale.<\/strong><strong>\u00a0<\/strong><em>La Settimana Grassa<\/em>\u00a0began yesterday with <strong>Giovedi\u2019 Grasso <\/strong>(fat Thursday) and will end next Tuesday with <strong>Martedi\u2019 Grasso<\/strong> (fat Tuesday,\u00a0or Shrove Tuesday). These are days of\u00a0euphoria and excess, particularly\u00a0regarding food,\u00a0because traditionally people had to use up all their meat, butter and eggs (hence the name fat week) before <strong>Mercoledi\u2019 delle Ceneri<\/strong> (Ash Wednesday)\u00a0when the <strong>Quaresima<\/strong> (Lent) begins. <em>Quaresima <\/em>was traditionally a period of penitence and moderation during which the\u00a0consumption of meat and rich food was not allowed.\u00a0During <em>la Settimana Gr<\/em>assa <strong>Feste in Maschera<\/strong> (masquerade parties)\u00a0will be\u00a0taking place\u00a0in every school and main <strong>piazza<\/strong>, as well as many private houses\u00a0(see my last blog about <strong>Maschere di Carnevale<\/strong>, Carnival masks), and wherever you go you\u2019ll find <strong>Chiacchiere di Carnevale<\/strong> (lit. Carnival chats), which are\u00a0the fried sweet pastries that are\u00a0also known as <strong>Cenci fritti<\/strong>\u00a0 (lit. fried rags) or <strong>Frappe<\/strong>. They are very easy to make, so if you want to try them, here is the recipe:<\/span><\/p>\n<p align=\"justify\"><strong><span style=\"font-size: x-small;font-family: Verdana\">Ingredienti:<\/span><\/strong><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>400 grammi di farina<\/strong> (14oz of plain flour)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>60 grammi di zucchero semolato<\/strong> (2.5oz caster sugar)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>50 grammi di burro<\/strong> (2oz butter)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>2 uova<\/strong> (2 eggs)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>200ml di vino bianco secco<\/strong> (200ml of dry white wine)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>Un\u00a0pizzico di sale<\/strong> (a pinch of salt)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>Abbondante olio per friggere<\/strong> (enough oil for deep frying)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\"><strong>50gr di zucchero a velo<\/strong> (2oz icing sugar)<\/span><\/p>\n<p align=\"justify\"><span style=\"font-size: x-small;font-family: Verdana\">Place the flour, caster sugar and salt on the work surface. Make a well and add the butter, which should be cut into small pieces, and the eggs,\u00a0then mix all the ingredients whilst\u00a0adding the white wine a bit at a time. Knead the dough until smooth, and then roll it out very thinly (about 1-2 mm), then,\u00a0using a fluted pastry cutter, cut the pastry into roughly 5cm by 2cm rectangles. Make 2 parallel lengthwise cuts through\u00a0each rectangle of pastry. Deep fry the <em>chiacchiere<\/em>\u00a0in hot oil until they become a dark, golden color,\u00a0drain them and put them on some kitchen paper, let them cool\u00a0and then dust them with icing sugar.
