{"id":815,"date":"2011-01-31T13:41:28","date_gmt":"2011-01-31T13:41:28","guid":{"rendered":"https:\/\/blogs.transparent.com\/norwegian\/?p=815"},"modified":"2014-08-22T14:35:57","modified_gmt":"2014-08-22T14:35:57","slug":"ice-harvesting-in-norway","status":"publish","type":"post","link":"https:\/\/blogs.transparent.com\/norwegian\/ice-harvesting-in-norway\/","title":{"rendered":"Ice Harvesting in Norway"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>On any given day between November and March (give or take a bit), I can have a chunk of ice in my hand within 1 minute. \u00a0If I wanted to, I could refrigerate and freeze all of my perishable items right outside of my door. \u00a0Because it&#8217;s 2011 in the developed world, during the spring and summer, ice makers do the work. \u00a0Therefore, I have never thought about the availability of ice. \u00a0I can always have a really cold beverage and preserve food in the summer. \u00a0If I were a restaurant or bar owner in England or Italy prior to the 20th century, however, the most efficient way to obtain ice would have been of great interest to me. \u00a0And it was for many in the food and beverage service industry at that time.<\/p>\n<div id=\"attachment_817\" style=\"width: 204px\" class=\"wp-caption aligncenter post-item__attachment\"><a href=\"https:\/\/blogs.transparent.com\/norwegian\/wp-content\/uploads\/sites\/14\/2011\/01\/images-11.jpeg\" aria-label=\"Images 11\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-817\" class=\"size-full wp-image-817\" title=\"images-11\"  alt=\"\" width=\"194\" height=\"259\" \/ src=\"https:\/\/blogs.transparent.com\/norwegian\/wp-content\/uploads\/sites\/14\/2011\/01\/images-11.jpeg\"><\/a><p id=\"caption-attachment-817\" class=\"wp-caption-text\">not specific to ice harvest in Norway of course, but shows how important it was!<\/p><\/div>\n<p>During the 17th century, clever Brits would use ice from nearby ponds and lakes to fill up their home-made ice storage houses, which were stored underground. \u00a0For private purposes, this method sufficed. \u00a0When the bar and restaurant scene came alive in the 18th and 19th centuries, this method was not sufficient for an increased ice demand. \u00a0Restaurant and bar owners had to figure out a way to get more ice. \u00a0The closest, coldest place was&#8230;.Norway of course!<\/p>\n<p>The first person to import ice from Norway was that father of a Londan man named William Leftwich, the first ice merchant. \u00a0Carlo Gatti, a Swiss-Italian entrepeneur, however, was much more heavily involved in importing ice from Norway for his ice cream business.<\/p>\n<h3><\/h3>\n<h3>How Norwegian Ice was \u2018Harvested\u2019<\/h3>\n<ul>\n<li>When the ice was 1-3 feet thick its surface was cleaned of all leaves, twigs grasses and snow.<\/li>\n<li>Ice ploughs drawn by horses went over the ice cutting it into strips about two feet wide.<\/li>\n<li>Men with large handsaws cut these strips into two foot squares, and using giant tongs they hooked the squares out of the water.<\/li>\n<li>The fjord had steep sides which were furnished with wooden slides. The blocks of ice slid down these chutes to the jetty where they were loaded into the ship\u2019s hold.<\/li>\n<li>For London orders, the sailing ships came to Regent\u2019s Canal Dock, Limehouse. They were unloaded and the ice professionally weighed.<\/li>\n<li>The ice was loaded onto a cart or barge and carried to the ice well for storage.
