All of it. I&#8217;m a vegetarian for 40 days! And for those who live in Brazil, or know anything about Brazilian cuisine&#8230; it&#8217;s not an easy task. Fortunately, a couple of my friends from work are vegetarians, so they&#8217;ve been able to help me out a little bit with my temporary diet.<\/p>\n<p>One thing that I&#8217;ve learned exists during this <em>challenge<\/em> of mine, is vegetarian <em>feijoada <\/em>(pronounced fay-ju-ah-dah)<em>! <\/em>We mentioned <em><a title=\"Feijoada Recipe\" href=\"https:\/\/blogs.transparent.com\/portuguese\/brazilian-cooking-series-part-i\/\" target=\"_blank\">feijoada<\/a><\/em> a while ago, and for those who don&#8217;t know, <em>feijoada<\/em> is a dish that is anything BUT vegetarian! It&#8217;s a black bean stew with anything and everything pork and\/or beef &#8211; from sausage to feet to tail (yes, TAIL!). It&#8217;s usually served with white rice, collard greens (very thinly sliced, unlike soul-food style), <em>farofa<\/em>, and slices of orange. It&#8217;s one of my favorite meals, and being \u00a0a vegetarian has made it difficult. \u00a0So I decided to look up a<a href=\"http:\/\/tudogostoso.uol.com.br\/receita\/5931-feijoada-vegetariana.html\" target=\"_blank\"> recipe for <em>feijoada vegetariana<\/em><\/a>, and I&#8217;ll probably try to make some this week (and let you all know how it turns out)!<\/p>\n<p>For those of you who aren&#8217;t too willing to try pork feet, this might be a good way for you to experience feijoada without all the not so desirable ingredients!<\/p>\n<p>&nbsp;<\/p>\n<p><strong><em>Feijoada Vegetariana <\/em><\/strong><\/p>\n<p><span style=\"text-decoration: underline\"><em>Ingredientes: <\/em><\/span><\/p>\n<ul>\n<li>1 kg de feij\u00e3o preto<\/li>\n<li>200 g de carne de soja em peda\u00e7os<\/li>\n<li>1 latinha de carne de gl\u00faten<\/li>\n<li>1 pacotinho de salsicha de soja<\/li>\n<li>Temperos (alho, cebola, louro, sal )<\/li>\n<li>Sazon feij\u00e3o<\/li>\n<li>1 colher de salsinha<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline\"><em>Modo de preparo<\/em><\/span><\/p>\n<ol>\n<li>Se qusier, deixe o feij\u00e3o de molho antes de por na press\u00e3o diminui o tempo<\/li>\n<li>Cozinhe o feij\u00e3o com folhas de louro<\/li>\n<li>Ferva a \u00e1gua com a carne de soja em peda\u00e7os e temperos e depois escorra<\/li>\n<li>Em uma panelinha frite o alho e a cebola<\/li>\n<li>Coloque sal e o sazon frite at\u00e9 dourar e reserve<\/li>\n<li>Depois de cozinhar o feij\u00e3o na press\u00e3o, coloque a carne de soja j\u00e1 fervida e os temperos j\u00e1 fritos<\/li>\n<li>Se precisar coloque mais \u00e1gua e deixe ferver para engrossar<\/li>\n<li>Quando estiver quase pronto pique a salsicha e a carne de glutem e junte ao feij\u00e3o<\/li>\n<li>Depois de pronto se precisar acrescente mais sal<\/li>\n<\/ol>\n<p>&#8212;-<\/p>\n<p><strong><em>Vegetarian Feijoada<\/em><\/strong><\/p>\n<p><span style=\"text-decoration: underline\"><em>Ingredients: <\/em><\/span><\/p>\n<ul>\n<li>1 kg black beans<\/li>\n<li>200 g de soy meat in cubes<\/li>\n<li>1 can of gluten meat<\/li>\n<li>1 pkg of soy sausage<\/li>\n<li>Spices (garlic, onion, bay leaf, salt)<\/li>\n<li>Sazon (bean flavor)<\/li>\n<li>1 tablespoon fresh parsley<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline\"><em>Directions<\/em><\/span><\/p>\n<ol>\n<li>If you&#8217;d like, leave the beans in water before cooking, reducing the cooking time.<\/li>\n<li>Cook beans with bay leaves [in a pressure cooker].<\/li>\n<li>Boil water with soy meat in cubes and spices. Drain.<\/li>\n<li>In a small pan, fry the onion and garlic.<\/li>\n<li>Add salt and sazon and fry until golden. \u00a0Set aside.<\/li>\n<li>After cooking the beans, place cooked soy meat and fried spices in the pan [with the beans].<\/li>\n<li>If needed, add more water and cook some more to thicken the stew.<\/li>\n<li>When the mixture\/stew is almost ready, cut sausage and gluten meat and add.<\/li>\n<li>Add more salt if desired!<\/li>\n<\/ol>\n<p><em>E bom apetite! <\/em><\/p>\n<p><span style=\"text-decoration: underline\"><em><br \/>\n<\/em><\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Being Catholic, for lent, I gave up meat and fish.
