Have you ever heard of \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>? Baked milk<\/a> is not a dairy<\/a> product that frequents markets outside of post-Soviet countries but \u0432 \u0420\u043e\u0441\u0441\u0438\u0438 \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301 \u043b\u044e\u0301\u0431\u044f\u0442 \u0432\u0441\u0435<\/strong>,<\/strong> \u043e\u0442 \u043c\u0430\u0301\u043b\u0430 \u0434\u043e \u0432\u0435\u043b\u0438\u043a\u0430.<\/strong> And as you will see today, it\u2019s a nutritious drink that has a rich taste and even richer cultural significance in Russia.<\/p>\n

The end product has a beautiful warm caramel color and taste that is sweet and creamy and very soothing. To give you an idea of what it looks like, here is a clip<\/a> of Donald Duck <\/em>episode Out of Scale <\/em>in which Chip \u2018n\u2019 Dale were drinking regular milk but as a kid who knew \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>\u00a0I used to swear they were drinking baked milk \u2013 I mean, just look at that delicious creamy color! Though, I highly doubt that an American cartoon released in 1950s would have promoted a traditional Russian drink.<\/p>\n

Either way, \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>\u00a0doesn\u2019t need outside influence to make it popular \u2013 it is a beloved dairy product that is also incredibly versatile! Many Russians love \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u0430\u0301\u0441\u043b\u043e, \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u0443\u044e \u0441\u043c\u0435\u0442\u0430\u0301\u043d\u0443, \u0438 \u043a\u043e\u043d\u0435\u0301\u0447\u043d\u043e \u0436\u0435<\/strong> \u0440\u044f\u0301\u0436\u0435\u043d\u043a\u0443,<\/a> \u043f\u0440\u0438\u0433\u043e\u0442\u043e\u0301\u0432\u043b\u0435\u043d\u043d\u0443\u044e \u0438\u0437 \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043d\u043e\u0433\u043e \u043c\u043e\u043b\u043e\u043a\u0430\u0301<\/strong>. I haven\u2019t yet tried making \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>\u00a0\u0434\u043e\u0301\u043c\u0430<\/strong> and unfortunately my family doesn\u2019t own \u043f\u0435\u0447\u043a\u0430<\/strong> but I\u2019m going to follow this recipe<\/a> when I do decide to make it (see the link for pictures).<\/p>\n

\u041f\u043e\u0447\u0435\u043c\u0443 \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301 \u043d\u0430\u0437\u044b\u0432\u0430\u0301\u0435\u0442\u0441\u044f \u00ab\u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u044b\u043c\u00bb?<\/strong> (Why is it called <\/strong>\u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301?<\/strong>)<\/strong><\/h4>\n

\u0422\u043e\u043f\u043b\u0451<\/u>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>\u00a0got its name because of a typo! According to many forums, the original name is \u0442\u043e\u043c\u043b\u0451\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301, <\/strong>with an \u041c <\/strong>instead of \u041f<\/strong>. \u0422\u043e\u043c\u043b\u0451\u043d\u043e\u0435<\/strong> is an adjective from the verb \u0442\u043e\u043c\u0438\u0442\u044c<\/strong>, as in \u201cto stew or cook something at a very low temperature for a very long time\u201d. But when in the 1930s baked milk was going to be produced on an industrial scale, the factory in Odesa made a typo and distributed the product as \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>. The rest is history.<\/p>\n

I didn\u2019t know this and used to think that \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435<\/strong> came from the fact that you needed to \u0442\u043e\u043f\u0438\u0442\u044c<\/strong> \u043f\u0435\u0447\u043a\u0443<\/strong> \u0447\u0442\u043e\u0431\u044b \u043f\u043e\u0442\u043e\u0301\u043c \u043f\u0440\u0438\u0433\u043e\u0442\u043e\u0301\u0432\u0438\u0442\u044c \u0432 \u043d\u0435\u0439 \u043c\u043e\u043b\u043e\u043a\u043e\u0301<\/strong>\u00a0(to heat up the pechka so that you can bake the milk in it). Speaking of which, \u0440\u0443\u0301\u0441\u0441\u043a\u0430\u044f \u043f\u0435\u0447\u043a\u0430<\/strong><\/a> is where, according to the recipes online, you would get \u043d\u0430\u0441\u0442\u043e\u044f\u0301\u0449\u0435\u0435 \u0442\u043e\u043f\u043b\u0451<\/span>\u043d\u043e\u0435 \u043c\u043e\u043b\u043e\u043a\u043e\u0301 (<\/strong>real baked milk<\/strong>)<\/strong>.<\/strong><\/p>\n
