Every sign points to it &#8211; <strong>\u00ab<\/strong><strong><span style=\"text-decoration: underline;\">\u043e<\/span><\/strong><strong>\u0442\u0442\u0435\u043f\u0435\u043b\u044c\u00bb<\/strong> [a thaw] that leaves <strong>\u00ab<\/strong><strong>\u043f\u0440\u043e\u0442<span style=\"text-decoration: underline;\">\u0430<\/span>\u043b\u0438\u043d\u044b\u00bb<\/strong> [patches of thawed out ground] in the retreating snow and causes <strong>\u00ab<\/strong><strong>\u043a\u0430\u043f<span style=\"text-decoration: underline;\">\u0435<\/span>\u043b\u044c\u00bb<\/strong> [melting icicles] to drip-drip-drip tiny droplets of clear cold water on the ground and on occasional passerby who forgets the basic Russian spring safety rule &#8211; <strong>\u00ab<\/strong><strong>\u043f\u043e\u0434 <\/strong><strong>\u0441\u043e\u0441<span style=\"text-decoration: underline;\">\u0443<\/span>\u043b\u044c\u043a\u0430\u043c\u0438 <\/strong><strong>\u043d\u0435 <\/strong><strong>\u0445\u043e\u0434<span style=\"text-decoration: underline;\">\u0438<\/span>\u0442\u044c\u00bb<\/strong> [don\u2019t walk under the icicles].<\/p>\n<p><em>(Do you know that, apparently, in Sweden it is no longer legal to <a href=\"http:\/\/www.fontanka.ru\/2010\/02\/26\/003\/\">walk under<\/a> the roof overhangs because of the melting icicles and snow? Well, at least in the town of Holstad it is.)<\/em><\/p>\n<p>Another sign of spring is <strong>\u00ab<\/strong><strong>\u0431<span style=\"text-decoration: underline;\">\u0430<\/span>\u0431\u0443\u0448\u043a\u0438\u00bb<\/strong> [old ladies] selling \u043f\u0443\u0447\u043a\u0438 <strong>\u00ab<\/strong><strong>\u0432<span style=\"text-decoration: underline;\">\u0435<\/span>\u0440\u0431\u044b\u00bb<\/strong> [bunches of pussy willow sprigs] <strong>\u00ab<\/strong><strong>\u043d\u0430 <\/strong><strong>\u0440<span style=\"text-decoration: underline;\">\u044b<\/span>\u043d\u043a\u0435\u00bb<\/strong> (at farmer\u2019s market) <strong>\u00ab<\/strong><strong>\u0438 <\/strong><strong>\u0432 <\/strong><strong>\u043f\u043e\u0434\u0437<span style=\"text-decoration: underline;\">\u0435<\/span>\u043c\u043d\u043e\u043c <\/strong><strong>\u043f\u0435\u0440\u0435\u0445<span style=\"text-decoration: underline;\">\u043e<\/span>\u0434\u0435\u00bb<\/strong> (in pedestrian underpass, typically under very busy roads or leading to subway stations).<\/p>\n<p>Competing with <strong>\u00ab<\/strong><strong>\u0431<span style=\"text-decoration: underline;\">\u0430<\/span>\u0431\u0443\u0448\u043a\u0438\u00bb<\/strong> and their willows are the sellers of <strong>\u00ab<\/strong><strong>\u043c\u0438\u043c<span style=\"text-decoration: underline;\">\u043e<\/span>\u0437\u0430\u00bb<\/strong> [mimosa], another traditional spring flower and an absolute must for celebration of <strong>\u00ab<\/strong><strong>\u041c\u0435\u0436\u0434\u0443\u043d\u0430\u0440<span style=\"text-decoration: underline;\">\u043e<\/span>\u0434\u043d\u044b\u0439 <\/strong><strong>\u0436<span style=\"text-decoration: underline;\">\u0435<\/span>\u043d\u0441\u043a\u0438\u0439 <\/strong><strong>\u0434\u0435\u043d\u044c\u00bb<\/strong> (International Women\u2019s Day) on March 8.<\/p>\n<p>I tried finding mimosas at floral shops here, in North Carolina, so I could take pictures for the story, but had no luck. So, while looking for a picture on Internet, I came across a \u00ab<strong><a href=\"http:\/\/www.liveinternet.ru\/users\/2873132\/post105073214\/\">\u0426\u0432\u0435\u0442\u044b \u0438 \u0437\u0432\u0451\u0437\u0434\u044b<\/a><\/strong>\u00bb [Flowers and Stars] site that had a floral horoscope. Bosses, do not overwork your Mimosa!] <\/em><\/p>\n<p>Take that to your boss when asking for a raise!<\/p>\n<p>Of course, if you Google <strong>\u00ab<\/strong><strong>\u043c\u0438\u043c<span style=\"text-decoration: underline;\">\u043e<\/span>\u0437\u0430\u00bb<\/strong> the top few links might not be to a flower itself, but to a traditional Russian salad.<\/p>\n<p>I rarely cook Russian food (more on this &#8211; some other time). But I guess I was so tired of the winter that, in the absence of retreating snow, thaw patches, life-threatening icicles and bunches of pussy willow or mimosa, making this salad was the only way for me to loudly proclaim &#8211; <strong>\u00ab<\/strong><strong>\u0421\u041a<span style=\"text-decoration: underline;\">\u041e<\/span>\u0420\u041e <\/strong><strong>\u0412\u0415\u0421\u041d<span style=\"text-decoration: underline;\">\u0410<\/span>!\u00bb<\/strong> [SPRING IS ALMOST HERE!]<\/p>\n<p>Now, before I give you the recipe and the instructions\u2026 In spite of this being one of the traditional Russian salads (or maybe exactly because of this) there are countless recipes for it. Heated arguments erupt online over pretty much every ingredient &#8211; butter or no butter; the type of cheese to use, if any; how much mayo, etc. And even when there is an agreement on which ingredients to use, there are different opinions on how to layer them.<\/p>\n<p>Russian cooks can be very <strong>\u00ab<\/strong><strong>\u043a\u0430\u0442\u0435\u0433\u043e\u0440<span style=\"text-decoration: underline;\">\u0438<\/span>\u0447\u043d\u044b\u0435\u00bb<\/strong> [black-and-white] in their preferences. And while they do mince the ingredients, they sure don\u2019t mince words criticizing each other\u2019s versions. As a result, even a simple salad recipe can cause <strong>\u00ab<\/strong><strong>\u0430\u0436\u0438\u043e\u0442<span style=\"text-decoration: underline;\">\u0430<\/span>\u0436\u00bb<\/strong> [agitated argument]. Good thing that in the end, <strong>\u00ab<\/strong><strong>\u0447<span style=\"text-decoration: underline;\">\u0443<\/span>\u0432\u0441\u0442\u0432\u043e <\/strong><strong><span style=\"text-decoration: underline;\">\u044e<\/span><\/strong><strong>\u043c\u043e\u0440\u0430\u00bb<\/strong> [the sense of humor] prevails and the salad, whatever version was used, <strong>\u00ab<\/strong><strong>\u0434\u0440<span style=\"text-decoration: underline;\">\u0443<\/span>\u0436\u043d\u043e <\/strong><strong>\u0441\u044a\u0435\u0434<span style=\"text-decoration: underline;\">\u0430<\/span>\u0435\u0442\u0441\u044f\u00bb<\/strong> [gets eaten by all].<\/p>\n<p>So here\u2019s a recipe for this festive, <strong>\u00ab<\/strong><strong>\u043d<span style=\"text-decoration: underline;\">\u0435<\/span>\u0436\u043d\u044b\u0439\u00bb<\/strong> [delicate], <strong>\u00ab<\/strong><strong>\u0441\u043b\u043e\u0451\u043d\u043d\u044b\u0439\u00bb<\/strong> [layered] salad.<\/p>\n<p><strong>Ingredients<\/strong> (plenty for 4 adults):<\/p>\n<p>&nbsp;<\/p>\n<p>1 <strong>\u00ab<\/strong><strong>\u0431<span style=\"text-decoration: underline;\">\u0430<\/span>\u043d\u043a\u0430 <\/strong><strong>\u043b\u043e\u0441<span style=\"text-decoration: underline;\">\u043e<\/span>\u0441\u044f\u00bb<\/strong> [can of salmon] in oil; drained and mashed with a fork<\/p>\n<p>4 hard-boiled <strong>\u00ab<\/strong><strong>\u044f\u0439\u0446<span style=\"text-decoration: underline;\">\u0430<\/span>\u00bb<\/strong> [eggs], whites separated from yolks, all finely chopped<\/p>\n<p>1 <strong>\u00ab<\/strong><strong>\u043c<span style=\"text-decoration: underline;\">\u0430<\/span>\u043b\u0435\u043d\u044c\u043a\u0430\u044f <\/strong><strong>\u043b<span style=\"text-decoration: underline;\">\u0443<\/span>\u043a\u043e\u0432\u0438\u0446\u0430\u00bb<\/strong> [small onion], can be replaced with a bunch of scallions, finely chopped<\/p>\n<p>3-4 <strong>\u00ab<\/strong><strong>\u043a\u0430\u0440\u0442<span style=\"text-decoration: underline;\">\u043e<\/span>\u0444\u0435\u043b\u0438\u043d\u044b\u00bb<\/strong> [potatoes], choose medium size yellow-skinned ones, boiled and peeled<\/p>\n<p>3-4 <strong>\u00ab<\/strong><strong>\u043c\u043e\u0440\u043a<span style=\"text-decoration: underline;\">\u043e<\/span>\u0432\u0438\u00bb<\/strong> [carrots], boiled and peeled<\/p>\n<p><strong>\u00ab<\/strong><strong>\u041b\u0451\u0433\u043a\u0438\u0439 <\/strong><strong>\u043c\u0430\u0439\u043e\u043d<span style=\"text-decoration: underline;\">\u0435<\/span>\u0437\u00bb<\/strong> [light mayonnaise]<\/p>\n<p><strong>\u00ab<\/strong><strong>\u041c<span style=\"text-decoration: underline;\">\u044f<\/span>\u0433\u043a\u0438\u0439 <\/strong><strong>\u0441\u044b\u0440\u00bb<\/strong> [soft cheese], entirely optional, grated<\/p>\n<p><strong>\u00ab<\/strong><strong>\u0417<span style=\"text-decoration: underline;\">\u0435<\/span>\u043b\u0435\u043d\u044c <\/strong><strong>\u043b<span style=\"text-decoration: underline;\">\u0443<\/span>\u043a\u0430, <\/strong><strong>\u043f\u0435\u0442\u0440<span style=\"text-decoration: underline;\">\u0443<\/span>\u0448\u043a\u0438 <\/strong><strong><span style=\"text-decoration: underline;\">\u0438<\/span><\/strong><strong>\u043b\u0438 <\/strong><strong>\u0443\u043a\u0440<span style=\"text-decoration: underline;\">\u043e<\/span>\u043f\u0430\u00bb<\/strong> [scallions &#8211; green parts, parsley or dill] for decoration, finely chopped<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>Spread the mashed salmon on a big shallow plate.\u00a0 Cover with a thin layer of mayonnaise.<\/p>\n<p>Sprinkle chopped onion, then &#8211; egg whites and shredded cheese (if using). Cover with another thin layer of mayonnaise.<\/p>\n<p>Grate boiled carrots directly on top of the salad, directly over the plate. Cover with yet another thin layer of mayonnaise.<\/p>\n<p>Grate boiled potatoes directly on top of the salad. Cover with the last thin layer of mayonnaise.<\/p>\n<p>Sprinkle egg yolks over the salad.<\/p>\n<p>Sprinkle, sparingly, finely chopped herbs over the yolks.<\/p>\n<p>Do NOT mix the layers. Place the salad into refrigerator for an hour or two (gives you just enough time to wash the dishes and catch your breath).<\/p>\n<p style=\"text-align: center;\"><em>Serve the way you would serve pie, trying to preserve the layers. Ask your friends to guess the ingredients. Enjoy.<\/em><\/p>\n<p><strong>P.S.<\/strong> I shared the salad with a couple of my American friends and got some mixed reviews. Overall, the salad was judged as \u201cgood\u201d. One friend suggested to add something crunchy to it (like maybe raw carrots instead of boiled ones or a layer of shredded apples). The other one was against crunchy, but said that the salad would improve immensely if mixed and used as a spread.
