It contains pieces of chicken, usually on the bone, large chunks of corn on the cob and two or three kinds of native potatoes, like <em>papas criollas<\/em>, <em>sabanera <\/em>and <em>pastusa<\/em>. It is seasoned with <em>guasca<\/em>, a kind of aromatic herb.<\/p>\n<p>Here\u2019s a recipe for ajiaco in Spanish with some vocabulary. Do you understand the instructions? Enjoy your meal.<\/p>\n<p><strong>Ablandar <\/strong>\u2013 to soften, to melt<br \/>\n<strong>A\u00f1adir, adicionar, agregar<\/strong> \u2013 to add<br \/>\n<strong>Cocinar <\/strong>\u2013 to cook<br \/>\n<strong>Colocar, poner<\/strong> \u2013 to put<br \/>\n<strong>Comenzar <\/strong>\u2013 to begin<br \/>\n<strong>Continuar <\/strong>\u2013 to keep (doing something)<br \/>\n<strong>Dejar <\/strong>\u2013 to leave<br \/>\n<strong>Enfriar <\/strong>\u2013 to cool off<br \/>\n<strong>Formar <\/strong>\u2013 to form<br \/>\n<strong>Guardar <\/strong>\u2013 to save, to put away<br \/>\n<strong>Llevar <\/strong>\u2013 to take, to carry, to bring<br \/>\n<strong>Retirar, sacar <\/strong>\u2013 to remove<br \/>\n<strong>Verificar <\/strong>\u2013 to check<\/p>\n<p style=\"text-align: center\"><strong>LA RECETA:<br \/>\n<\/strong><\/p>\n<p><strong>Ingredientes<\/strong>:<\/p>\n<p><em>3 gajos de cebolla larga<br \/>\n1 ramito de cilantro<br \/>\n2 pollos medianos despresados (4 libras)<br \/>\n15 tazas de agua<br \/>\n2 cubos de caldo de gallina<br \/>\n1 1\/2 libras de papa sabanera, pelada y partida en rodajas delgadas.<br \/>\n1 libra de papa criolla gruesa y pelada<br \/>\n2 libras de papa pastusa, pelada y partida en rodajas gruesas.<br \/>\n1 1\/2 tazas de hojas de guasca<br \/>\n7 mazorcas tiernas, peque\u00f1as partidas a la mitad<\/em><\/p>\n<p><strong>Preparaci\u00f3n<\/strong>:<\/p>\n<p><em>1. En una olla grande con el agua se coloca la cebolla, el cilantro y el pollo, ll\u00e9vela a la estufa y ponga a hervir a fuego lento hasta que el pollo comience a ablandar, retire frecuentemente la espuma que se va formando.<\/em><\/p>\n<p><em>2. Retire de la olla el cilantro y la cebolla, a\u00f1ada los cubos de caldo y pimienta al gusto. Adicione la papa sabanera, contin\u00fae la cocci\u00f3n a fuego medio durante 30 minutos. Cuando el pollo est\u00e9 blando s\u00e1quelo de la olla, d\u00e9jelo enfriar y guarde para m\u00e1s adelante.<\/em><\/p>\n<p><em>3. Agregue la papa criolla y la pastusa, verifique la saz\u00f3n. Siga cocinando hasta que las papas est\u00e9n blandas, entonces adicione las hojas de guasca y las mazorcas. Cocine durante 15 minutos. A\u00f1ada el pollo desmenuzado y cocine de 5 a 10 minutos m\u00e1s.<\/em><\/p>\n<p><em>4.
