Labor Day weekend was like yesterday to me. I turned around, and now <em>l\u1ec5<\/em><em> T\u1ea1 \u01a0n<\/em> (Thanksgiving) is coming in just a few days! Following the American tradition of celebrating <em>l\u1ec5<\/em><em> T\u1ea1 \u01a0n<\/em>, the Vietnamese community in the United States observes this important holiday as well, though with a twist in food preparation.<\/p>\n<p>There is a reason to call <em>ng\u00e0y<\/em> <em>l\u1ec5<\/em><em> T\u1ea1 \u01a0n<\/em> (Thanksgiving day) a \u201c<em>ng\u00e0y g\u00e0 t\u00e2y<\/em>\u201d (turkey day). You gotta have a <strong><em>g\u00e0<\/em><\/strong><strong><em> t\u00e2y n\u01b0\u1edbng<\/em><\/strong><strong> (<\/strong><strong>roasted turkey<\/strong><strong>)<\/strong> on <em>ng\u00e0y<\/em> <em>l\u1ec5<\/em><em> T\u1ea1 \u01a0n<\/em>. Some Vietnamese families, however, often substitute <em>g\u00e0 t\u00e2y<\/em> (turkey) with <em>g\u00e0 \u0111i b\u1ed9<\/em> (free range chicken). Others do use <em>g\u00e0 t\u00e2y<\/em> but prepare it in the Vietnamese way.<\/p>\n<p><strong>TURKEY MARINATING<\/strong><\/p>\n<p>In general, for any kind of meat, Vietnamese often like to marinate the meat before cooking. It is the same case for the <em>g\u00e0<\/em><em> t\u00e2y<\/em>\u2019s cooking process. Instead of brining, they would marinate it for at least a couple hours. The marinating main ingredients always include:<\/p>\n<ul>\n<li><em>Ti\u00eau<\/em> (pepper)\n<p><div id=\"attachment_552\" style=\"width: 273px\" class=\"wp-caption alignright post-item__attachment\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-552\" class=\"size-medium wp-image-552\" src=\"https:\/\/blogs.transparent.com\/vietnamese\/wp-content\/uploads\/sites\/40\/2021\/11\/joakim-jardenberg-ZK5FTv44A90-unsplash-3-263x350.jpg\" alt=\"\" width=\"263\" height=\"350\" srcset=\"https:\/\/blogs.transparent.com\/vietnamese\/wp-content\/uploads\/sites\/40\/2021\/11\/joakim-jardenberg-ZK5FTv44A90-unsplash-3-263x350.jpg 263w, https:\/\/blogs.transparent.com\/vietnamese\/wp-content\/uploads\/sites\/40\/2021\/11\/joakim-jardenberg-ZK5FTv44A90-unsplash-3.jpg 640w\" sizes=\"auto, (max-width: 263px) 100vw, 263px\" \/><p id=\"caption-attachment-552\" class=\"wp-caption-text\">Photo by Joakim Jardenberg on Unsplash<\/p><\/div><\/li>\n<li><em>H\u00e0nh<\/em> <em>t\u00e2y<\/em> (onion)<\/li>\n<li><em>T\u1ecfi<\/em> (garlic)<\/li>\n<li>A pinch of salt and sugar.<\/li>\n<\/ul>\n<p>In addition, some recipes call for:<\/p>\n<ul>\n<li><em>R\u01b0\u1ee3u<\/em><em> n\u1ea5u \u0111\u1ed3 \u0103n<\/em> (cooking wine)<\/li>\n<li><em>G\u1eebng<\/em> (ginger)<\/li>\n<li><em>M\u1eadt<\/em><em> ong<\/em> (honey)<\/li>\n<li><em>N\u01b0\u1edbc<\/em><em> t\u01b0\u01a1ng x\u00ec d\u1ea7u<\/em> (soy sauce)<\/li>\n<li><em>D\u1ea7u<\/em><em> h\u00e0o<\/em> (oyster sauce)<\/li>\n<\/ul>\n<p><strong>STUFFING<\/strong><\/p>\n<p>As for what to stuff in the <em>g\u00e0<\/em><em> t\u00e2y<\/em>\u2019s cavity, there are a lot of variations.\u00a0 For example, some would call for these ingredients:<\/p>\n<ul>\n<li><em>N\u1ea5m m\u00e8o<\/em> (black fungus)<\/li>\n<li><em>N\u1ea5m \u0111\u00f4ng c\u00f4\/n\u1ea5m h\u01b0\u01a1ng<\/em> (shitake mushrooms)<\/li>\n<li><em>H\u1ed9t<\/em><em> sen<\/em> (lotus seeds)<\/li>\n<li><em>L\u1ea1p<\/em><em> x\u01b0\u1edfng<\/em> (Chinese sausage)<\/li>\n<li><em>T\u00f4m kh\u00f4<\/em> (dried shrimp)<\/li>\n<li><em>Hoa kim ch\u00e2m<\/em> (daylily flower)<\/li>\n<li><em>Th\u1ea3o d\u01b0\u1ee3c <\/em>(medicinal herbs)<\/li>\n<li><em>Mi\u1ebfn <\/em>(Cellophane noodle)<\/li>\n<\/ul>\n<p><strong><em>G\u00c0 T\u00c2Y CHAY<\/em><\/strong><strong> (<\/strong><strong>VEGETERIAN TURKEY)<\/strong><\/p>\n<p>For the vegetarians, they can celebrate \u201c<em>ng\u00e0y g\u00e0 t\u00e2y<\/em><em>\u201d <\/em>with <em>g\u00e0<\/em><em> t\u00e2y chay<\/em> (vegetarian turkey). It\u2019s an art to make the imitation meat and the Vietnamese are really good at it. I call it an art because to taste properly one must make it somewhat similar as one would make meat by just using soybean products and different types of seasoning.<\/p>\n<p><strong><em>CH\u00c1O G\u00c0 T\u00c2Y<\/em><\/strong> <strong>(<\/strong><strong>TURKEY PORRIDGE)<\/strong><\/p>\n<p>Thanksgiving Day is a day when family leisurely gets together for usually at least half a day. A couple hours after a heavy Thanksgiving meal, the Vietnamese prefer to have a light supper, and turkey porridge is the best choice to serve along with other leftovers from the heavy Thanksgiving meal.<\/p>\n<p>To make <em>ch\u00e1o g\u00e0 t\u00e2y<\/em>, utilize the turkey bones and\/or carcass to make the broth. Add some jasmine rice and some shredded or cubes of leftover turkey meat. Besides pepper, sugar, and salt, I often add a couple thin slices of ginger to chase off the strong, gamey flavor of turkey. I also add chopped carrots and celery (optional). When serving, I add chopped green onions and cilantro. Oh, in my case, I would also add fish sauce!<\/p>\n<p>I\u2019m ready for <em>l\u1ec5<\/em><em> T\u1ea1 \u01a0n<\/em>! I can\u2019t wait to have some <em>g\u00e0<\/em><em> t\u00e2y <\/em>n\u01b0\u1edbng with <em>nh\u00e2n<\/em><em> nh\u1ed3i<\/em> (stuffing) and <em>n\u01b0\u1edbc<\/em><em> s\u1ed1t th\u1ecbt<\/em> (gravy), <em>s\u1ed1t nam vi\u1ec7t qu\u1ea5t<\/em> (cranberry sauce), <em>khoai lang n\u01b0\u1edbng<\/em> (roasted sweet potatoes), and have dessert with<em> b\u00e1nh b\u00ed ng\u00f4<\/em> (pumpkin pie).
