Mexican recipe: Mole Poblano Posted by Adir on Dec 16, 2010 in Spanish Culture, Videos
When you think of Mexican food you think of mole. Don’t you know what mole is? Well, mole is a kind of sauce, typically Mexican.
One of the most famous moles is mole poblano. Its name comes from the Mexican state of Puebla and is prepared with dried chili peppers like ancho, pasilla, mulato, and chipotle, ground nuts or seeds, spices, Mexican chocolate, salt and lots of other ingredients like avocado leaves, onions, banana and garlic. To make the sauce a little thicker, Mexicans include crushed toasted tortillas, bread crumbs or crackers.
After it’s made, it’s poured over chicken (pollo) or turkey (guajolote). However, it can be poured over enchiladas, tacos, or over vegetables. In the two videos below you can see a real Mexican cook making mole poblano. You can click here to check another recipe of mole poblano.
