Γεια σας! Today I will share with you a recipe of one of the most famous Greek appetizers: τζατζίκι! For those of you who are not familiar with Greek food, tzatziki is a dip made of yogurt, cucumber and garlic. It is made with ingredients found in any grocery store, so you should give it a try!

The ingredients needed are measured in grams. If you want to convert grams to ounces, you can do it here. You will need the following ingredients:

Υλικά (Ingredients)

– 400 γρ. στραγγιστό γιαούρτι (strained yogurt)

– 1 αγγούρι (cucumber)

– 3-4 σκελίδες σκόρδο (garlic cloves)

– 2 κουταλιές της σούπας ξύδι (2 tbl spoons of vinegar)

– αλάτι (salt)

– ελαιόλαδο (olive oil)

Extras:

– μισό ματσάκι άνιθο κομμένο σε μικρά κομματάκια (half a bunch of dill finely chopped)

– καυτερή πάπρικα (hot paprika)

 

Notes on the ingredients

– It is very important to use strained yogurt (plain or low fat) that gives tzatziki a nice, thick and “velvety” texture.

– You can add or remove clove, depending on how strong you want the taste to be.

– Apple vinegar can be used instead of vinegar.

– Dill is an extra but it matches perfectly the combination of yogurt, garlic and cucumber. Personally, I never make tzatziki with no dill.

– Hot paprika is not a must but it adds a spicy taste.

 

Εκτέλεση (Preparation)

– Τρίψτε το αγγούρι και σταγγίξτε το πολύ καλά. Grate the cucumber, let it strain very well and remove any liquid left by squeezing the small pieces. This is the most important thing to do.

– Τρίψτε το σκόρδο σε πολύ λεπτά κομματάκια. Grate the garlic in fine pieces.

– Βάλτε όλα τα υλικά σε ένα μπολ. Put all the ingredients in a bowl.

– Ανακατέψτε το μείγμα με ένα κουτάλι. Stir the mixture with a spoon.

– Δοκιμάστε και προσθέστε αλάτι ή ξύδι, αν χρειάζεται. Taste to add salt or vinegar, if needed.

– Προσθέστε την πάπρικα. Add the paprika.

– Βάλτε το τζατζίκι στο ψυγείο. Put the tzatziki in the refrigerator.

Let it cool for a couple of hours and serve it cold. You can use it as a dip for pita bread, crackers, or vegetable sticks, fried potatoes or anything else you like! If you have any questions or comments, feel free to post them. Καλή επιτυχία! Good luck!
