In this post, I give you a very easy recipe for a delicious appetiser. It is called Mutabbal (متبل) or Baba Ghanouj (بابا غنوج).

Ingredients:

1 large eggplant (aubergines)

1  large cloves garlic

½  tablespoon lemon juice

2  tablespoons tahini (sesame paste)

1  tablespoon yoghurt

1  teaspoon salt

How to make Mutabbal:

1-            Roast the eggplants.  There are many ways to do that. Some roast the eggplants directly over the fire on the stove top, others poke holes in the eggplant with a toothpick then wrap the eggplant in aluminum foil and bake it in the oven for around 60 minutes. Some people cut the eggplant in half, place it on a baking sheet and bake it in the oven for 60 minutes.

2-            Once eggplants are warm, peel the skin off. I find that peeling the skin under running cold water is easier. Place the eggplants in a sieve to drain.

3-            In a food processor, add the eggplant, garlic, Tahini paste, lemon juice and salt. Then, add the yoghurt and a cube of ice and mix again.

When you serve it, you can sprinkle olive oil, paprika or cumin on top if you like!

المقادير

1 باذنجان كبير الحجم

1 حبة كبيرة ثوم

½ ملعقة كبيرة عصير ليمون

2 ملعقة كبيرة طحينة

1 ملعقة كبيرة زبادي

1 ملعقة صغيرة ملح

طريقة عمل متبل الباذنجان

      نشوي الباذنجان

      نزيل القشرة الخارجية

       في ماكينة تحضير الطعام، نضيف الباذنجان والثوم وعصير الليمون والطحينة والملح وتخلط جميع المكونات، ثم يضاف الزبادي ومكعب ثلج وتخلط المكونات مرة أخرى وتقدم.

يمكن التجميل برش زيت الزيتون أو البابريكا أو الكمون بحسب الرغبة
