Garam masala गरम मसाला is a versatile spice mix that can be used to add zest to a variety of dishes in Indian cooking. While proportions and nuances vary from region प्रांत (praant) to region and chef to chef, the basic ingredients remain the same.

गरम मसाला can be used by itself or in tandem with other spices. It is a flavorful mix to have at hand that makes for simple, tasy, Indian cooking. It can be used in subzis and dals … try adding a dash of गरम मसाला for an extra edge in your fried rice. Here is how you can make your own jar of गरम मसाला to sprinkle or scoop as you choose, into your Indian cooking.

Garam Masala Recipe
Take a pan (tawa) and lightly (halka) dry-roast the ingredients one by one (ek ek karke).
Mix, allow to cool (thanda hone de; imperative) and grind (peens le; imperative) to a fine powder. If required, sieve (chhan le; imperative). Store in an airtight jar.

१/२ कटोरी साबुद धनिया
१/४ कटोरी जीरा
२५-३० हरी इलायची
६-७ तेज पत्ता
१०-१२ काली इलायची
१५-२० लौंग
६-८ जावित्र
५-६ दालचीनी (२-इंच टुकड़े)
२ चक्र फूल
१ बड़ी चम्मच सौंफ
१ छोटी चम्मच काली मिर्च
1/2 katori sabud dhaniya
1/4 katori jeera
25-30 hari ilaichi
6-8 tej patta
10-12 kali ilaichi
15-20 laung
6-8 javitri
5-6 daalchini (2-inch tukde)
2 chakr phool
1 badi chammach saunf
1 choti chammach kali mirch
1/2 c coriander seeds
1/4 c cumin
25-30 green cardamom pods
6-7 bay leaves
10-12 black cardamom pods
15-20 cloves
6-8 mace
5-6 cinnamon (2-inch sticks)
2 florets star anise
1 tbs fennel
1 tsp peppercorn
