Did you have some eggs lying around the house that you didn’t use for Easter? Instead of wasting the eggs by throwing them out, why not make some tasty dishes using the eggs!

To make 계란 말이 mix some eggs with salt. Then pour the mixture over a heated and greased pan. Throw in some sliced ham and green onions. Instead of ham you can use crab meat or diced sausages. Then lift one edge of the egg layer and roll the egg until the far end of the pan. Let it cool for a minute and start cutting the rolled up egg into wide pieces. One tip is to roll the egg tightly before cutting, otherwise it might fall apart.

To make 계란 조림, boil as many eggs as you desire. When the eggs cool off, take the shell off. Mix some water and soy sauce together. The rule of thumb is to mix two cups of water with one cup of soy sauce, but it all depends on the person. Then put about a tablespoon of sugar. Let the eggs sit in the mixture. When the eggs turn brown, cut them however you want and lastly, serve them.

계란국 is egg soup. First prepare some boiling water. Then add soy sauce, salt, and a little red pepper powder to an anchovy broth. You can also add bean sprouts, tofu and green onions. Lastly, crack some eggs over the soup. A yellow-white substance will form over the soup. Some people also add pieces of chicken in the soup. This soup can be served with a bowl of rice or just by itself.

계란찜 is a steamed egg dish. First, place some eggs mixed with water in an earthenware pot called 뚝배기. Add some green onions and small sized, salted shrimp called 세우젓. The trick is not to oversteam the dish. When it’s over steamed, it may taste overly dry. However, if it’s not steamed for long enough, the eggs won’t be properly cooked.
