Today, we’re learning about Couscous كسكسي/ كسكس. If you’ve not heard of it before, it’s a savoury dish that is made in North Africa, i.e. the countries of Maghreb (click here if you’re interested in learning how you can make couscous the libyan way). The reason why I would like to focus on this dish is because it has been recently added to UNESCO’ intangible cultural heritage list قائمة التراث الثقافي غير المادي لليونسكو. Pronunciation

 

The dish is pronounced differently in each of the 5 Northern African countries, and sometimes even within the same country.

 

For example, it’s:

 

Couscsy كُسْكْسِي

This is one way of pronouncing it. It’s common is Libya (western part) and Algeria.

 

Couscsou كِسْكْسُو

In Algeria, Morocco and Libya (eastern part).
