I have translated the recipe in case you need the english version or for you to learn how to use the Swedish one.

Sponge cake

Ingredients

2 Eggs

2 dl Sugar

3 dl Flour

2 tsp Baking powder

2 tsp Vanilla extract /Vanilla sugar/powder

1 dl Water or milk

50-75 grams butter/margarine

Breadcrumbs

Ingredients for filling

1- 2 st bananas

lots of strawberries (or any type of berries of your choice)

1-2,5 dl whipped cream (if not more depending on taste)

Vanilla custard

Instructions

Oven:175 G Time 40-45 min

  • Whip eggs and sugar in a bowl , whip until fluffy and airy.
  • Mix all the dry ingredients in a separate bowl well, make sure there are no clumps of baking powder.
  • Melt the butter/margarine in a pan.
  • Pour the flour mixture gradually into the bowl with the eggs and sugar, then adding butter and water or milk until the batter is nice and even.
  • Mix with a rubberscraper or spoon.
  • Grease the baking form with butter and coat with breadcrumbs.
  • Pour batter into form.
  • Leave in the middle of the oven for aprox. 40 – 45 or when the cake is golden brown, and passes the toothpick test. Ie. if you stick a toothpick in the centre it should come out without any sticky parts on it.
  • Once done, take out and leave to cool on counter.

Next step if you are making a jordgubbstårta:

  • Once the cake has cooled cut it either into two or three layers.
  • Alternate the layers starting with the custard, then either mashed banana or banana slices, some also put sliced strawberries in between as well. You can also put cream on before laying another sponge on top.
  • Repeat until the final layer of sponge has been placed, on the top of this final layer put only whipped cream and decorate with strawberries or berries of your choice.

Hoppas det smakar gott 🙂
