A Sizzling Barbecue Dish: How to Prepare Shish Taouk Posted by on May 22, 2013 in Arabic Language, Culture

Marhaba! (مرحبا) Tonight we are inviting some friends over for dinner (العشاء). Like always our friends insist that we cook a Middle Eastern dish. Fortunately for us and them, we could not turn down their request and we have decided to serve chicken Shish Taouk for dinner tonight. Like us they love barbecuing chicken ( الدجاج المشوي) and they have hinted a couple of times before that they have not had a decent, authentic and well prepared Shish Taouk (شيش طاووق) dish.  In this post, I would like to share with you the recipe that my wife and I will use to prepare this tasty Middle Eastern dish.

Like some of the other websites that I have used before, today I am borrowing this recipe from another good Mediterranean cooking website called DedeMed Mediterranean Cooking, the owner of the website Dede refers to it as ‘Dede’s Mediterranean Kitchen. I have also added a YouTube video from the same website that provides you with cooking instructions (تعليمات الطبخ) visually.

I have borrowed a brief introduction of this dish from the same website:

Shish Tawook (taouk) is a traditional Turkish shish kebab(شيش كباب) which can also be found in Syrian and Lebanese cuisine. Cubes of chicken are skewered and grilled. Common marinades are based upon yogurt or a tomato puree, though there are many variations. Shish taouk is typically eaten with garlic paste toum (ثوم).

Total Time: 20 Minutes

Prep Time: 10 Minutes

Cook Time: 10 Minutes

Ingredients

  • 2 boneless chicken breasts (صدور الدجاج الخالية من العظم)
  • 3 cloves minced garlic (الثوم المفروم)
  • 1/2 tbs tomato paste
  • 2 tbs ketchup (كاتشب/ الطماطم)
  • 1/4 cup yogurt
  • 1/4 cup lemon juice (عصير الليمون)
  • 1/2 tsp salt (ملح)
  • 1 tsp paprika (فلفل أحمر)
  • olive oil (زيت الزيتون) for cooking

Directions

Cut (قطع) chicken into 1/2 inch cubes, add all other ingredients except olive oil. Cover and let marinate (نقع) in refrigerator for 2-3 hours. Heat pan to med/high heat, add 3 tbs olive oil then add chicken, cook uncovered for 5 minutes on each side or until moisture (رطب) has evaporated and chicken is lightly browned.

We are planning to serve this tasty sizzling dish with French fries, Lebanese/Syrian bread, tabbouleh and a dish of homemade hummus. It is an excellent dish and I encourage and invite you all to give it a try and let me know how it goes.
