I went to a teacher’s convention in João Pessoa, state of Paraíba, and there I had the chance to eat “bolo de rolo”. The bolo de rolo is a kind of roll cake with very thin layers and it has guava jam inside. It’s one of the most delicious things I’ve ever eaten!

Some useful vocabulary

goiabada – guava jam
rocambole – roll cake
camadas – layers
fino – thin
iguaria – delicacy
nordestino – northeasterner
de lambuja/lambugem – as a bonus
gema – yolk
clara – white
em neve – with stiff peaks (egg whites)
fermento – yeast
forma – baking pan
forno – oven
já aquecido – pre-heated
pano molhado – wet cloth
recheio – filling
açúcar cristal – granulated sugar
doceira – pastry chef
