The most important February holiday is upon us: восемнадцатое февраля — День Пельменей! (Pelmeni day or Russian Dumpling Day)

This time-tested recipe of Russian dumplings will make a very thoughtful present. Только представьте (Just imagine): a hand-written recipe card with a gallon-size Ziplock of frozen pelmeni — вот это романтика! (now that’s romance!)

So, take out a pen and paper because we are going to practice some Russian cursive with Yelena’s pelmeni recipe.

1. Capital letters

What is going to give your cursive the most pizzazz are, of course, the Capital Letters.

Let’s practice with the ones that appear in Yelena’s pelmeni recipe:

В, Д, М, Н, П, Р, Т, Ц, Ф

2. Numbers

This is not only a matter of aesthetics but practicality. Russians write their numbers differently (с завитушками or with more squiggles), so follow my guide above if you don’t want to sabotage your friends’ pelmeni-making party. I can’t tell you how many times Americans have told me that my 2s and 7s look like the letter “z”.

3. Connecting letters

It’s one thing to learn how each letter is written in cursive — it’s a whole other thing to connect them in the way that’s pretty and efficient. I personally never know how to best connect the letter “о” to the next letter — and this recipe has plenty of words like that. Also, remember that writing in cursive doesn’t mean that all letters must connect as you write them — sometimes there are those tricky combinations like -Дл- or -ба-. It’s ok to add that connecting line after you finish writing the word.

4. Мягкий знак

So many verbs end in “ь” in recipes and with мягкий знак, less is more. Avoid unnecessary lines and stop the pen as you draw that little circle into itself.

Для теста

• 3 стакана муки
• 1 стакан холодной воды
• 1 большое яйцо
• 1 неполная столовая ложка соли

Для начинки

• 500г. мяса (смешать говядину и свинину 1:1)
• 1 луковица
• соль и перец по вкусу

Тесто:

Просеять муку в миску и сделать в центре углубление. Разбить яйцо в муку, добавить соль. Влить воду и замесить тесто. Накрыть тесто полотенцем и оставить на час.

Фарш:

Прокрутить мясо с луком в мясорубке. Добавить соль и перец по вкусу.

Разделить тесто на несколько частей. Раскатать часть теста в тонкий пласт и вырезать кружочки стаканом или формочкой. (Не вырезать все кружки сразу, иначе они засохнут). Центр каждого кружка наполнить фаршем и соединить края так чтобы получился пельмешек.

Выложить пельмени на полотенце, хранить в морозильнике.

Варка:

Варить пельмени 5-7 минут в кипящей подсоленной воде в большой кастрюле, чтобы они не слиплись. Можно добавить лавровый лист и горошины перца в воду для вкуса.

Подавать к столу со сливочным маслом. Также, можно подавать с бульоном, зеленью, сметаной, или соусом на выбор.
